Being Italian, I love Italian flavors. I love pasta and bread and more pasta. But, my body doesn’t really love those things. Or maybe it loves them too much because pasta and bread will stay with me…forever. This year I’ve made a commitment to work those flavors I love into other meals, like these Italian Roasted Cauliflower Steaks.
Checking all the boxes
With cauliflower being a popular substitute for all things in the grain family, I thought it might be the perfect way for me to get my fix of Italian, carb-like things in a plant-based package. Now I will say we don’t adhere to any specific kind of diet. We aren’t Paleo, Keto, vegetarians or anything else. But if you are, Italian Roasted Cauliflower Steaks really checks all of those boxes.
All the flavor
The herbs and Parmesan cheese included in on the Italian Roasted Cauliflower Steaks really make it a standout meal. Garlic, oregano, rosemary, basil, Paprika (technically a Mexican spice) and parsley pair beautifully with delicious olive oil and shredded parmesan cheese to make it one unforgettable meal.
Besides the herbs, the way these Italian Roasted Cauliflower Steaks are roasted give the steaks a beautiful flavor. They’re baked at a really high temperature with the herbs, olive oil and cheese slathered on to give them a delectable, unique flavor.
How to cut cauliflower for roasted cauliflower steaks
- Before you begin, you want to make sure you clean and cut the cauliflower. To fully clean it, peel away any of the green leaves that might still be attached.
- Use a large chef’s knife and trim the stem at the bottom, but make sure to keep the head of the cauliflower untouched.
- Next, cut right through the center of the cauliflower to help keep the floret heads together.
- You want to cut each slice 1-1.5 inches. I find that I get about three full steaks out of each head. If you have some excess, little florets you can add those to your baking sheet too like I did. Or save them for another recipe like cauliflower rice or buffalo cauliflower bites. I just hate to waste them.

Italian Roasted Cauliflower Steaks
Ingredients
Italian Roasted Cauliflower Ingredients
- 2 heads of cauliflower
- 2 Tbsp. pureed garlic or finely minced garlic
- 2 tsp. dried oregano
- 1 tsp. dried rosemary
- 1 tsp. dried parsley I like curly parsley as opposed to the flat leaf Italian kind but either will work.
- 1 tsp. Kosher salt
- 1/2 tsp. fresh, ground black pepper
- 1/2 tsp. dried basil
- 1/4 tsp. paprika
- 1/2 cup Parmesan cheese
- 1/2 cup olive oil
- 2 Tbsp. olive oil
- Spray olive oil
- Optional: Fresh parsley, extra Parmesan cheese and additional salt and pepper to top.
Instructions
Italian Roasted Cauliflower Instructions
- Preheat the oven to 425 degrees.
- Slice the cauliflower into 1 inch steaks starting from the middle.
- Spay baking sheet with the spray olive oil and lay your steaks on it.
- Use the 2 Tbsp. of olive oil and brush each side of the cauliflower steaks.
- Mix together the 1/2 cup of olive oil, all the herbs and spices and the 1/2 cup of Parmesan cheese. Mix well.
- Using a spoon, spoon a little bit of the mix onto each cauliflower steak.
- Then using a basting brush, brush the mixture all over each piece of cauliflower.
- Repeat those two steps on the other side of the cauliflower.
- Bake for 15 minutes and then remove and flip over.
- Bake another 15 minutes.
- Garnish with fresh parsley, additional Parmesan cheese, and additional salt and pepper as desired.
