I remember trying it for the first time when I was about 7 and an ardent seafood hater. But buttery, garlicy Shrimp Scampi hooked me. I think this Butter Garlic Shrimp Scampi recipe will hook you too.

One of the reasons I love this Butter Garlic Shrimp Scampi recipe is because it feels like a lighter meal. Sure, it’s drenched in butter, but if you eat it with broccoli and maybe some cauliflower rice you’re balancing the scales a bit. 🙂
But let’s be honest with one another, the way you should eat this is with some pasta or crusty bread. I’ve paired this Butter Garlic Shrimp Scampi recipe with this delicious Orzo Pasta {HERE} and it’s phenomenal. We also love it mixed in with some simple Fettuccini.
How to cook Butter Garlic Shrimp Scampi
You can make this recipe in a variety of ways. You can sauté it, bake it or even grill it. I like to bake it when I’m making it in the house because I’m usually making it to go with something else. Baking saves me hands-on time.
Still, this recipe cooks extremely fast. If you have access to fresh shrimp on a regular basis then the quick cook time on this makes the Butter Garlic Shrimp recipe an easy weeknight dinner. You can make it in 8-10 minutes and it’s so good that if I could find fresh shrimp all the time, I would make this at least once a week.
Tips for cooking this Butter Garlic Shrimp Scampi recipe
- Have all your ingredients right by you and ready. Since this recipe is made so quickly you don’t really have time to be chopping in between a step. Prep everything else first, then rinse your shrimp and begin cooking.
- Use fresh shrimp for this recipe. I’ve made this using freezer shrimp from the grocery store and it’s just not the same. That said, I’ve made it with shrimp from a company that flash freezes its shrimp and has high-quality seafood and it was good! Ideally, you want high quality, fresh shrimp.
- Use dry white wine like a Sauvignon Blanc. You don’t want something overly sweet in this savory dish.
- If you don’t want to use wine, you can use chicken broth. Or make it with just the butter.
What you need to make this recipe
There isn’t a lot of equipment you need to make this Baked Butter Garlic Shrimp Scampi recipe. I do recommend a good baking dish and I’ve been loving these Staub baking dishes lately {HERE}. This recipe uses a lot of shrimp so making it in a larger baking dish isn’t a bad idea. Full disclosure, I did use a smaller dish for the photos only. 🙂 The one I used is {HERE} and it’s become one of my favorite dishes for dips and appetizers (which this could easily be). But, to make the whole recipe, I would use (and did use) the 13×9 dish {HERE}

Baked Butter Garlic Shrimp Scampi
Ingredients
- 1.5 lbs. of fresh shrimp, peeled and deveined You can leave the tails off or keep them on. You can also usually buy them peeled and deveined.
- 3 Tbsp. olive oil
- 1/2 cup butter, melted
- 1/4 cup dry white wine
- 5 cloves of fresh garlic, mined You can also use 5 tsp. of a garlic puree
- 3 Tbsp. lemon juice
- 1/4 cup fresh grated Parmesan cheese - divided
- 1/3 cup fresh chopped parsley
- Salt and pepper to taste
Instructions
- Preheat your oven to 400 degrees.
- Rinse the shrimp and lay them in the baking dish. Coat both sides with the olive oil.
- Combine the melted butter, white wine, lemon juice, garlic and half of the parmesan cheese. Whisk well.
- Pour the mixture over the shrimp.
- Add salt and pepper and put in the oven for 8-10 minutes. You don't want to go longer than 10 minutes.
- Remove from oven, top with remaining Parmesan cheese and the parsley.
- Serve immediately with additional salt, pepper and lemon juice to taste.
