These Marinated Mediterranean Chicken Skewers are a delicious, low carb recipe and the perfect way to welcome spring and grilling season!
I’ve been working on working off some of this pandemic weight for a few weeks now, and I’ve been fairly successful with an active workout schedule and a lower carb diet. So far, I’ve lost 12 pounds and I have no intention of giving it up anytime soon.
However, it means my recipe development has been a bit slower. You all know I love my pastas and bread. And while I have plenty of cheat days, and will still create delicious carby meals, I’ve been coming up with some creative, delicious low carb options too. That said, these Marinated Mediterranean Chicken Skewers with a beautiful combination of herbs and lemon might be my new, favorite, low carb dinner meal.
With spring on the horizon (I swear I can feel it in my bones!), my Mediterranean Chicken Skewers are a great meal to help bridge the seasons. They can be made in the oven or on the grill!
Making Mediterranean Chicken Skewers
To make my Mediterranean Chicken Skewers, you need to give yourself a little time. The marinade is a big key to making them taste incredible and marinading takes time.
My marinade combines fresh herbs like basil, thyme, sage and more with olive oil, lemon juice and some salt and pepper with boneless chicken thighs to produce an amazing flavor. To get the lemony, herby flavor to really sink in, you need to marinade the chicken for at least 6 hours, but no more than 24. If you prepare the marinade the night before you can cook it for dinner the next evening.
I mix everything together in a bag or container that seals well and then shake it combine. I’ll also flip it a few times throughout the marinading time frame.

Cooking the Mediterranean Chicken Skewers
While many people think of chicken skewers or chicken kabobs as a summertime, grill dinner idea, the recipe for these Mediterranean Chicken Skewers can be used year-round. They can be made on the grill or baked in the oven.
In the oven I cook them for about 30 minutes. I flip them halfway through to make sure both sides get attention. You want them to have a bit of char to pair with the Mediterranean herbs.
When grilling, set the grill to medium heat and grill until they’re lightly charred. You will need 10-15 minutes. Check one to the thicker pieces of chicken with a meat thermometer to ensure they’re fully cooked.
The veggies included
Once the chicken is marinaded, I added it to skewers with Brussels sprouts and red onion. I’m a Brussels sprout lover so including them was purely out of taste preference. If you are not a Brussels sprout lover, try broccoli or asparagus instead.
I also wanted to include onions because they just always add something to a dish. Full of flavor and savory goodness. I went with red onion because it’s considered to be more of a Mediterranean vegetable.
Feel free to add in any others you like that will hold up to roasting. Before cooking, brush them with a little olive oil while on the skewers and then sprinkle on a little sea salt.
The sauces that take it up a notch
While I think that these Mediterranean Chicken Skewers are good enough all on their own, I created two sauces that really elevate the recipe. Kevin likes to mix them and then dunk his chicken and veggies in them. 🙂 I think they’re good together and separately.
The first sauce is really a dressing. It’s a Basil Honey Vinaigrette and it might be my new favorite dressing to slather on everything. Due to the honey as a sweetener, this dressing is not low carb. But it’s completely worth it to me.
The second is a Feta Yogurt Dill Sauce that I love on veggies. Since it is made with feta it has a bit of a texture to it. However, if you’re a lover of feta than I’m confident you will love this too.

Marinated Mediterranean Chicken Skewers

Ingredients
Ingredients for the Skewers
- 1 lb. package boneless chicken thighs, cut and marinated
- 1/2 Ib. Brussels sprouts, bottoms cut off and cut in half
- 1 large red onion, cut into
- 1 Tbsp. olive oil for the vegetables
- Salt and pepper to taste
- 1/2 a lemon
Ingredients for the Marinade
- 2 Tbsp. fresh basil, chopped
- 2 Tbsp. fresh thyme leaves
- 2 Tbsp. fresh oregano, chopped
- 2 Tbsp. fresh parsley, chopped
- 1 Tbsp. sage, chopped
- 3 Tbsp. of olive oil
- 1 Tbsp. lemon juice
- 3 cloves garlic, sliced
- 1 tsp. sea salt
- 1/2 tsp. fresh cracked pepper
- Optional: 1/2 tsp. red pepper flakes
Basil & Honey Dressing Ingredients
- 1 cup olive oil
- 1/2 cup fresh basil Use the whole leaves and pack them into half cup.
- 1 small shallot, chopped
- 1/2 tsp. sea salt
- 1/4 cup honey
- 1/4 cup champagne vinegar or white wine vinegar
- 1 Tbsp. lemon juice
Feta Yogurt Dill Sauce
- 1 cup Dill
- 3/4 cup plain Greek yogurt
- 3/4 cup Feta cheese
- 2 1/2 tsp. lemon juice
Instructions
Feta Yogurt Dill Sauce Instructions
- Combine all ingredients in a food processor and blend. Refrigerate until needed.
Basil & Honey Vinaigrette
- Combine all ingredients in a food processor and blend. If you make this far in advance, refrigerate until 1 hour before needed. Remove 1 hour before use so the olive oil will come back to room temperature.
Chicken Skewer Instructions
- Add the copped chicken to a plastic bag or container that can be sealed and then add all the marinade ingredients. Cover or close the bag and refrigerate for at least 8 hours. You can go up to 24.
- Preheat the oven to 400 degree.
- Add the chicken and the vegetables to the skewers in an alternate fashion.
- Add them to a baking sheet lined with parchment paper.
- Brush the onions and Brussel sprouts with a little olive oil and then sprinkle a little more salt and pepper over them. Squeeze the lemon half over everything.
- Bake for 15 minutes on one side and then flip them.
- Bake for another 15 minutes.
- Serve immediately with the sauces, additional vegetables or a side of rice, potatoes or homemade fries.
