Sometimes I find side dishes to be the trickiest things. You don’t want to spend too much time on them because they’re not the main dish. But if you’re like me, you still want them to be delicious, compliment a great meal and worth the calories. This Mediterranean Grilled Asparagus checks all of those boxes!
Mediterranean Grilled Asparagus is a delicious way to dress up this tasty vegetable. It’s a favorite of mine and one that I like to eat year- round. Usually we just char it or bake it, but topping it with this delicious feta lemon sauce and Mediterranean veggies really makes it unforgettable. It takes plain ol’ asparagus to a whole new level.
Is Mediterranean Grilled Asparagus a healthy?
Asparagus is a healthy, green vegetable that is high in fiber, vitamin A, C, E and K. It’s also low carb and has plenty of antioxidants.
To make the sauce, I’ve used Greek yogurt as the creamy base. Greek yogurt is lower in calories and fat, and higher in protein than sour cream. It makes an excellent base of this thick sauce and created a nice, smooth texture to coat the veggies.
Topping off the feta lemon sauce is a variety of veggies you might find on any Mediterranean dish including Kalamata olives, tomatoes and cucumbers. You can even add in some raw red onion if you want a little zip.
Overall, this is a low-carb, vegetarian recipe that you won’t want to miss!
Mediterranean grilled asparagus is easy to make!
Sometimes the best recipes are also the most simple. This Mediterranean Grilled Asparagus only takes about 15 minutes to make and plates up beautifully whether it’s a family meal on a weeknight or a weekend barbecue with friends and family. There aren’t too many steps to follow or ingredients to buy either.
All you have to do is grilled the asparagus for about 10 minutes on an outdoor grill or inside on a cast iron grill and it’s done. While it cooks it’s easy to whip together the lemon feta sauce and chop the additional vegetables.
How to cook asparagus
When I cook asparagus I always cut off 1-2 inches on the bottom of each stalk. That ends of the stalks tend to be touch and woody. Trimming is the best way to go to get a delicious flavor and texture.
When I cook asparagus, olive oil is always a part of the mix. In this case, I like to coat each stalk before grilling – whether I’m cooking inside on the cast iron grill or outside on the grill. Just a light coating with a basting brush will do.
Depending on the thickness of the asparagus you will want to cook each side for about 5 minutes. You want to make sure they are tender enough to pierce with a fork and still firm enough to bit into without turning to mush.
