All you need for this recipe is fresh green beans, olive oil, sea salt, pepper and almonds. Sometimes I also like to add bacon to these, but you really don’t need it.
I like using fresh green beans in my recipe for Green Beans with almonds because generally the freshest ingredients you can find will make the best meals. In this case, fresh green beans will hold up better in the oven and won’t get as soggy as say frozen green beans. You can try to use frozen and let them de-thaw first before making this, but the fresh ones will be better. Don’t try to use canned green beans. They just won’t hold up to being roasted.

- Roasting them makes them pretty hands off. I don’t have to stand there over the stove while I’m cooking other things. I can’ put these in the oven, set the timer and get back to them when they’re done.
- I love, LOVE the caramelization you get from roasting vegetables. Anytime you roast something at a high temperature you just get a really beautiful flavor that comes with it. I appreciate that for all veggies but especially these green beans, which you may not even think of roasting. Together with the almonds it really makes this dish a standout.

Tips for making Green Beans with Almonds
- Use the best extra virgin olive oil you can find. The better the quality, the better the overall dish. You can also substitute this with another oil of your choice as long as you are used to the flavor trade off.
- Use sea salt in this dish and fresh cracked pepper. Again, the fresher the better and I truly believe some sea salt does a much better job of enhancing flavor than table salt.
- Use a dark baking sheet to make these on. A darker baking sheet will give this recipe for Green Beans with Almonds a darker roast. Again, this just adds to the flavor profile.
- You can further plus up this dish in a few ways. Try adding in bacon crumbles (A shot below), sprinkle on some parmesan cheese, squeeze on a little lemon or even add a little blue cheese if you enjoy it.

Recipe for Green Beans with Almonds
Equipment
- Baking sheet
Ingredients
- 1 lb. fresh green beans
- 2 Tbsp. extra virgin olive oil
- 2 tsp. sea salt
- 1 tsp. black pepper
- 1/3 cup sliced almonds
- Additional salt and pepper to taste.
Instructions
- Preheat the oven to 425 degrees.
- Wash and dry the green beans and then trim the stems. Line them up together to do this faster.
- Place them in a single layer on a baking sheet and drizzle them with the olive oil. Toss to coat them on all sides and make sure they get back to the single layer for cooking.
- Sprinkle with the sea salt and pepper and then bake for 15 minutes.
- Remove them from the oven and add the almonds. Toss them again to coat the almonds in the olive oil.
- Bake for another 3 minutes or so. Don't go over 5 minutes or the almonds will get too browned.
- Remove and serve immediately.
