Beets are one of my favorite fall and early winter vegetables. I love to eat them plain, topped with goat cheese, pickled and in every seasonal salad. But in this recipe, I wanted to introduce you to a new way to eat beets -Roasted and chopped on toast with a creamy horseradish dressing.
European roots
I know that right away, beets and horseradish can sound like a tough combo. And I know you’re also thinking that horseradish is reserved for roast beef or prime rib.
However, beets and horseradish are actually a classic combination for some Eastern European cultures. There’s a dish in the Polish culture called Cwikia. It consists of grated beets and horseradish that’s served with smoked means and sausage and is common at holiday celebrations.
There’s a similar dish called Hren in Russia and they again consider it a condiment that’s served with smoked meats. And there’s again a similar dish in the Slavic region and Jewish cultures. In fact, horseradish itself is a very common condiment during Passover Sedar.
So, when Silver Spring Foods challenged me to come up with an out of the box idea for their horseradish, I didn’t have to stray too far from the box. I just had to think outside the country for a little non-U.S., old world inspiration.
An unexpected flavor combination
Roasted beets have a beautiful caramelized sweetness to them. And while you may think of horseradish as spicy and tart, just a little bit of creme fraiche and a few simple ingredients turns it into a delightful dressing. Combined with the roasted beets you have a unique and delicious dish that’s reminiscent of the traditional European dishes – without needing any sausage.
A few tips for working with beets
- Beets can dye things – including your cutting board and countertop. I suggest using parchment paper over a cutting board before. Also make sure you’re not sweating your favorite sweater.
- Use a potato peeler to take the skin off this root vegetable.
- Beets will roast better and faster if you cut them. I suggest cutting them into quarters and then cutting them again for the best cooking.
Tips for working with horseradish
- Horseradish is a root and you can grow it in your garden. In fact, it can go a little crazy because the root spreads.
- Using prepared horseradish like the Silver Spring Foods Horseradish is easier than prepping it on your own. Preparing horseradish on its own can be worse than cutting onions.
- Once you open prepared horseradish, you should store it in the refrigerator to preserve its flavor and potency.
Roasted Beet Toast with horseradish dressing
To make this recipe, you don’t need a lot of ingredients. I love that it’s simple to prepare and no-fuss. A little horseradish, lemon juice, crème fraiche, salt and some crusty bread makes a great meal!
I included this as a “toast” recipe so you could eat it as a lunch, dinner or even an appetizer (use smaller toasts than I did), but this is also delicious as a salad too.
I added arugula as a bottom layer below the beets and it was really an incredible combination. I could just eat the roasted beets and horseradish dressing over arugula. If you’re trying to go low carb, or you just feel like a salad, try this combo too!

Roasted Beet Toast
Ingredients
Ingredients for Roasted Beets
- 3-6 slices of your favorite rustic bread
- 6 large beets (or 9 small beets)
- 4 Tbsp. olive oil, divided
- 1/2 cup of parsley
- 1/2 cup of arugula
- 2 Tbsp. sunflower seeds
Ingredients for Horseradish Dressing
- 1.5 Tbsp. Silver Spring Foods Prepared Horseradish
- 1/2 cup creme fraiche
- 5 tsp. fresh squeezed lemon juice
- 1/2 tsp. salt
- 2 Tbsp. water
Instructions
- Preheat your oven to 400 degrees
- Chop the beets in quarters and then chop them again.
- Mix the beets in with 2 Tbsp. of olive oil and add them to a baking sheet.
- Sprinkle with salt and pepper.
- Bake the beets for 25 minutes.
- Once the beets are cooked, let them cool and chop them into even smaller pieces to make them bite sized.
- Meanwhile, brush the other 2 Tbsp. of olive oil onto the surface of your bread. Broil for2-3 minutes.
- To make the dressing, add the crème fraiche, Silver Spring Foods Horseradish, lemon juice, salt and water to a bowl and whisk.
- Add beets to a bowl and add the dressing to them. Mix well.
- Add in the parsley with the beet mix.
- Top off the toast with arugula and then add the beet and horseradish mix.
- Top off with the sunflower seeds, parsley and a little more salt.
- Serve! Roasted Beet Toast can be served warm or served cold.
