When the farm down the street had some late blooming sweet strawberries I headed around the corner to buy some for us and make my Homemade, small batch Strawberry Jam. Instead of just using the jam on toast and pancakes though, I decided to swirl some into a homemade Vanilla Strawberry Swirl ice cream for a delectable summer treat for my family.
Strawberry Ice Cream is one of my dad’s favorite flavors, and while this isn’t specifically strawberry, something about it still feels nostalgic to me and makes me think of him. (He lives in Colorado so we don’t see him often.) The smooth vanilla flavor with the sweet strawberry swirls just tastes like summertime at it’s finest. And my finest summers included licking a cone full of ice cream on hot July and August days with my family beside me. With swirls of homemade strawberry jam, every bit of this ice cream is summer sweetness.
What is no churn ice cream?
My Vanilla Strawberry Swirl Ice Cream is a no churn ice cream. If you’re not familiar with no churn ice cream it is ice cream made without an ice cream machine. All you need are a few minutes and a mixer. I recommend a stand mixer because it provides consistent power and you don’t have to stand right next to it. But a hand mixer would work too.
Selecting a Strawberry Jam
To make my Vanilla Strawberry Swirl Ice Cream, I use my Homemade Small Batch Strawberry Jam {HERE}. It is really simple to make and has an amazing flavor that I prefer over store bought jams. It still contains big chunks of strawberries that are really lovely in the Vanilla Strawberry Swirl ice cream. It makes for a nice visual and outstanding flavor too. However, if you have a strawberry jam recipe you love or you have a favorite store bought brand, you can try using those too.
Vanilla Bean or Vanilla extract
I added in the extra component of vanilla to my Strawberry Swirl Ice Cream because I love the way it compliments the strawberries. It is really a nice, summery flavor but also reminds me of something I would have eaten growing up. You can use either Vanilla Bean or Vanilla extract in this recipe. Full disclosure, I tend to use both because I really love the flavor. When I do this I will use 1 teaspoon of vanilla extra and the seed scrapings from one of the vanilla beans. I’ll give you that in the recipe below.
If you prefer just vanilla bean you can use two of them. If you don’t want to spend the money on vanilla beans then you can use 2 1/2 teaspoons of vanilla extract.
How to store No Churn Vanilla Strawberry Swirl Ice Cream
You can store the Vanilla Strawberry Swirl Ice Cream in a freezer safe container that is air tight. I love these containers {HERE} for storing ice cream. They’re easy to use and keep the ice cream so fresh! However, as long as it is freezer safe and closes completely, you can use any container.
Tips for making my No Churn Vanilla Strawberry Swirl Ice Cream
- Even though this is no churn it still needs to be whipped. I recommend using a stand mixer with the whisk attachment because it makes it all so much easier. It helps with consistency and continuous power. This is the one I use {HERE}. You can also use a hand mixer with the whisk attachments. Just be aware it might take a little longer.
- Use a cold bowl and cold whisks for this recipe. While the ice cream is easy to make, it can be temperamental. The cold bowl and whisks will help keep it all together
- Be careful not to over mix this recipe. Over mixing ice cream can cause it to take on a chunky look before it is frozen and cause it to have a bit of a grainy taste. You only need to mix this until you have soft peaks and on a medium speed, that should only take about 5 minutes. Then immediately remove it and fold in the jam with a spatula and freeze it.
- If you are making my Strawberry jam you can make it ahead of time. It will last for up to one month in an airtight container in the refrigerator as long as it has not been opened.

Vanilla Strawberry Swirl Ice Cream
Equipment
- Stand mixer or hand mixer
- Ice cream container for storage
Ingredients
- 2 cups heavy whipping cream
- 14 oz sweetened condensed milk 1 can
- 1 scrapings from a vanilla bean
- 1 tsp. vanilla extract
- 12 oz cold Strawberry Jam
- **** OR scrapings of 2 vanilla beans or if using no vanilla bean then 2 tsp. of vanilla extract.
Instructions
- Put the mixing bowl and the whisk attachments in the refrigerator for 2 hours prior to making.
- Add the heavy cream, condensed milk, vanilla bean and vanilla extract to the mixing bowl and whip until you see soft peaks. Do no over whip or ingredients will begin to look curdled.
- Remove the bowl from the mixer and add 1/3 of it to the ice cream storage container. Spoon on some of the strawberry jam and gently swirl. Add another 1/3 to the container and repeat. Add the last 1/3 to the container and top with the last of the strawberry jam. Swirl it in and close the lid.
- Freeze for 12 hours.
