It is blueberry season in Michigan and this week I wanted to make something with blueberries to celebrate. Western Michigan, and more specifically Southwest Michigan, is truly a perfect climate for growing blueberries. While I haven’t had much luck with my clay-like soil, a hop skip and a jump from me is beautiful sandy soil near Lake Michigan with a high water table – something that blueberry bushes love. In fact, the roads that lead to our house are dotted with You Pick blueberry farms that will be the most delicious blueberries you’ve ever tasted.
So I decided to combine this season fruit celebration with a summertime favorite everyone loves – ice cream!
Making it at home
It is kind of incredible to me that I haven’t tried to make no churn ice cream until this summer. I’m an ice cream lover and – like my love of soup – its one of those food items I can eat year-round.
However, now that I’ve made this incredible, creamy Blueberry Pie Ice Cream the sky is the limit on for easy homemade ice cream recipes. I may never buy store-bought ice cream again. And this Blueberry Pie Ice Cream recipe is no churn! That means you can make it with a stand mixer or even a hand mixer. .
The base for this easy homemade ice cream recipe is simple. It only has three ingredients: Heavy whipping cream, sweetened condensed milk and vanilla.
To make it into my creamy and delicious Blueberry Pie Ice Cream, all you have to do is add a little homemade blueberry compote and some crushed graham crackers!
Creating the flavor
The base for the no churn Blueberry Pie Ice Cream is a vanilla ice cream. If you’re a lover of vanilla, you could make this and stop there.
However, I’m telling you, this no churn Blueberry Pie Ice Cream will be come your favorite ice cream flavor that you never knew about.
The compote or blueberry sauce is a major factor in creating the dreamy taste profile. To make it, all you have to do is combine blueberries, sugar, cinnamon and a bit of water on the stove. Simmer it for about 10 minutes and then let it cool completely. Store it in an airtight refrigerator until you’re ready to make some ice cream. (It also make a delicious blueberry topping for pancakes, waffles and more.)
The graham crackers add such a nice touch to the flavor and really taste like the crust of a blueberry pie. All you have to do is crush them. Truly nothing too fancy.
Tips for making Blueberry Pie Ice Cream
- I use fresh blueberries to make the compote for my Blueberry Pie Ice Cream, but you can also use frozen if you like.
- I love using my stand mixer to make the no churn Blueberry Pie Ice Cream and I recommend you do the same if you have one. I have this one {HERE} and love having a nice excuse now to use it in the middle of summer. However, if you don’t have a stand mixer, you can use a hand mixer. I have this one {HERE}.
- It’s helpful (but not necessary) to have an ice cream container to freeze and store this in. I have this one {HERE} and love the way that it insulates the ice cream and the way it fits in my freezer. However, any storage container that can withstand freezer temperatures will work.
- You can make the blueberry sauce a few days ahead of time and keep it for up to about a week in an airtight container in the refrigerator.
- A lot of ice cream recipes will tell you that it needs about 4 hours to freeze. I recommend letting it freeze for 12 hours.

Blueberry Pie Ice Cream
Equipment

Ingredients
Blueberry Compote Ingredients
- 2 1/2 cups blueberries
- 3/4 cup sugar
- 1/2 Tbsp. cinnamon
- 1/8 cup water
Blueberry Pie Ice Cream ingredients
- 4 cups heavy cream
- 28 oz sweetened condensed milk Two cans
- 1 1/2 Tbsp. vanilla
- 1 sleeve crushed graham crackers
- About 1/2 - 3/4 the blueberry compote mixture.
Instructions
Blueberry Compote Instructions
- Combine blueberries, sugar, cinnamon and water in a sauce pan over low heat. Simmer for about 10 minutes until the blueberries start to break down a bit. Stir continuously and on't let it boil.
- Let cool completely on the stove. Then add it to a refrigerator safe jar and cool until needed.
Blueberry Pie Ice Cream Instructions
- Combine heavy cream, sweetened condensed milk and vanilla in a mixer. Mix for 5-10 minutes on medium speed until there are stiff peaks.
- Add in a layer of the ice cream base to a freezer safe storage container. Then drizzle in the blueberry mix and add some crushed graham crackers. Continue to layer until you reach the top of the container.
- Freeze for 12 hours.
- Serve with an ice cream cone or in a bowl!
