Serving sauces over grilled meat is my summer secret weapon. After spending several hours in the garden picking for our farm store, tending to animals and working, I’m always exhausted and hot by dinner time. But the magical thing about summer is that the grill provides me an easy way to make a delicious protein packed meal or some beautiful grilled veggies very, very quickly. And if you add a little sauce to whatever you’re cooking – in this case it’s pork chops – you can easily turn a morning piece of meat into something extraordinary. My Honey Mustard Pork Chops for grilling recipe is one of those special recipes that perfect for the season and has so much flavor!
The pork chop cut
You can make these Honey Mustard Pork Chops for grilling with either bone-in or boneless pork chops. My family prefers them without the bone, but I will tell you that using the cut with the bone in will help the meat to stay more tender.
Thicker pork chops for grilling are best because they won’t dry out as quickly as a thinner pork chop. Whether you decide to go with bone-in or boneless, you want them to be at least 1 inch thick to help maintain the moisture.
Pork Chops for grilling cooking time
Pork chops are one of those cuts of meat that are picky about their cooking time. If you over cook them – whether it is in the oven or on the grill – then you end up with really dry, chewy meat.
Sear the pork chops for 2 minutes per side over medium to high heat on the grill. This will help to create the grill marks and seal in the juices. Then reduce the heat to medium and cook the pork chops for 4-7 minutes per side or until the internal temperature reaches 145 degrees. Boneless pork chops will be on the lower end of that time range while bone-in pork chops will be on the higher end.
Allow the pork chops to rest a few minutes when they come off the grill and keep in mind they will continue to cook for a few minutes once removed.
According to the USDA, pork chops should be cooked to a minimal internal temperature of 145 degrees and then letting them rest for 3 minutes.
The honey mustard marinade and sauce
The Honey Mustard sauce/marinade is key to this pork chops for grilling recipe. It brings in loads of flavor and only uses a couple ingredients so it’s quick to whip up. It includes honey, Dijon mustard, ground mustard and soy sauce. That’s it.
I split my sauce/marinade and use half of it as a marinade and then serve the other half as a sauce with the fully cooked pork chops. If you want to, you can break the sauce into thirds and use it as a marinade on the grill too. Keep in mind it has honey in it so you will get extra char if you decide to do this. I don’t tend to go this route because I have picky children. 🙂
However, it is important to let the pork chops marinade in the sauce. You can use a plastic bag or an airtight container. Let them marinade in the Honey Mustard sauce in the refrigerator at least 2 hours to help lock in that flavor. You can let them marinade for up to 12 hours to

Tips for the Honey Mustard Pork Chops for the grill
Again, please note the time differences if you plan to use boneless versus bone-in.
Make sure to season with sea salt and pepper before adding the marinade to the pork chops. Even when using a sauce, all meat should be seasoned properly.
Marinading time is important to make sure these are flavored appropriately. Please make sure to marinade at least 2 hours.
Again, know if you decided to use the marinade while the chops are on the grill you will get a bit more char. The natural sugar in the honey will cause the grill to flare.

Honey Mustard Pork Chops for Grilling
Ingredients
Ingredients for the Honey Mustard Marinade/Sauce
- 1/2 cup honey
- 3 Tbsp. Ground Mustard
- 3 Tbsp. Dijon mustard
- 3 Tbsp. soy sauce
- 2 Tbsp. apple cider vinegar
Ingredients for the Pork Chops
- 4-6 Pork Chops Either boneless or bone-in
- Season both sides with sea salt and pepper
- 1/2 the Honey Mustard marinade as a marinade
- 1/2 the Marinade for dipping sauce
- Parsley for serving
Instructions
- Prepare the marinade by mixing everything together. Split into halves. Reserve 1/2 for a dipping sauce in the refrigerator.
- Season the pork chops on both sides with sea salt and fresh cracked pepper.
- Pour 1/2 the marinade over the pork chops in a bag or container and then refrigerate for 2-12 hours. If you use a container, make sure to flip it over a few times to ensure proper coating.
- Heat the grill to medium to high.
- When the grill is ready, sear all the pork chops for 2 minutes. Then cook 4-7 minutes per side or until the internal temperature reaches 145 degrees. Remember, boneless pork chops will cook faster.
- Remove the pork chops and let rest for 3 minutes.
- Serve with additional sauce for dipping and fresh parsley.
