Breakfast isn’t always something I’m good about eating. But whenever there’s a group to feed, or a holiday morning, breakfast becomes a big part of my day. This Apple & Sausage Breakfast Casserole is now going to be a staple in my breakfast repertoire. You can never really never go wrong with a casserole, right? They’re easy to make, they’re versatile and they’re delicious.
All the savory sweetness
I love a good bite or two of a sweet breakfast, but my real love is in savory breakfasts. Even with the apples, this Apple & Sausage Casserole is filled with savory flavors that will warm your soul. The bite of crisp, sweet apple is a nice way to break up all that savoriness and add a whole new, beautiful flavor to this dish.
I just uncased breakfast sausage in this recipe. Whatever brand I’m using, I grab the original. I think when I made this it was Jimmy Dean? The sausage had a nice, and slightly unexpected spice to it that I appreciated. Whatever brand you choose, I would stick with an original flavor. However, if you’re a big fan of spicy, I actually think a spicy sausage would also work well here.
The apple in this dish doesn’t cook up like an apple in a pie. It should stay fairly crisp and somewhat juicy, which makes it such a flavorful add to the breakfast sausage.
Other ingredients included
Besides the apples and sausage, my Apple & Sausage Breakfast Casserole has plenty of fresh herbs included. I’m a fan of fresh herbs and I’m lucky enough to still have some growing. This breakfast casserole includes thyme, rosemary and sage. Then in addition to the fresh herbs, I use a lovely smoked Gouda cheese to add some creaminess. The Gouda pairs magically with the apples and sausage and really pulls the whole dish together.
Also, like most breakfast casseroles, this one includes plenty of eggs as the binding ingredient, milk and French bread. It’s really a meal all in one slice.
Tips for making Apple and Sausage Breakfast Casserole
- You need 12 eggs for the Apple and Sausage Breakfast Casserole recipe. Just giving you that heads up right off the bat because I know it’s a lot. But again, this is a breakfast casserole. It’s meant to feed a crowd or feed your family for a couple of days if you make it as breakfast (depending on family size).
- Use a good, hardy casserole dish to make this. I love my Le Creuset red dish that you can find {HERE}. It’s perfect for fall, the holidays and even summer!
- Use extra virgin olive oil and fresh herbs if you can. Those ingredients are always so important when it comes to flavor.
- If you can’t find smoked Gouda cheese, regular Gouda is fine too.
- I used Pink Lady apples in this recipe but you can use Honey Crisp or Fuji too.
- You can make this the night before if you like. Just add another 1/4 cup of milk, cover it and refrigerate it.
- The Apple and Sausage Casserole can be saved for up to three days in an airtight container in the fridge.

Apple and Sausage Breakfast Casserole
Equipment
- Baking dish
Ingredients
- 3 apples (Pink Lady, Fuji or Honey Crisp)
- 1 1/2 Lbs. breakfast sausage
- 8 oz. Smoked Gouda Cheese
- 12 eggs
- 1 medium onion, diced
- 2 Tbsp. fresh sage chopped (If using dried, use 3 Tbsp.)
- 1 Tbsp. fresh thyme leaves (Use 1 1/2 if using dried)
- 1 Tbsp. fresh rosemary, chopped (Use 1 1/2 if using dried)
- 1 thin loaf of French bread, chopped into 1 inch cubes
- 1 cup whole milk
- 2 Tbsp. extra virgin olive oil
- Salt and pepper to taste
Instructions
- Remove apple skins and chop the apples.
- Add 2 Tbsp. olive oil to a sauté pan on medium heat. Then add onions and sauté until translucent.
- Add in sausage and brown. Then add in the herbs and the apples. Cook 3 minutes.
- In a baking dish, add the French bread and then half the Gouda cheese. Then add on the sausage and apple mix.
- Whisk together the eggs and milk and pour the mix over the contents of the baking dish.
- Top with the rest of the cheese and a sprinkle of the herbs.
- Refrigerate for 1 hour or overnight. Cover tightly if you are going to let this sit overnight.
- Bake at 375 for 30-40 minutes and serve immediately.

I’m in the process of making this now so can’t rate it on taste. However, instructions on the French bread are too vague–slice the loaf or break into chunks and exactly weight of loaf. Also eggs were left off ingredients list and I had to go back to read to find the amount. I’m hoping it’s worth all the work.
