Remove apple skins and chop the apples.
Add 2 Tbsp. olive oil to a sauté pan on medium heat. Then add onions and sauté until translucent.
Add in sausage and brown. Then add in the herbs and the apples. Cook 3 minutes.
In a baking dish, add the French bread and then half the Gouda cheese. Then add on the sausage and apple mix.
Whisk together the eggs and milk and pour the mix over the contents of the baking dish.
Top with the rest of the cheese and a sprinkle of the herbs.
Refrigerate for 1 hour or overnight. Cover tightly if you are going to let this sit overnight.
Bake at 375 for 30-40 minutes and serve immediately.
