Apple and Sausage Breakfast Casserole

Ingredients

  • 3 apples (Pink Lady, Fuji or Honey Crisp)
  • 1 1/2 Lbs. breakfast sausage
  • 8 oz. Smoked Gouda Cheese
  • 12 eggs
  • 1 medium onion, diced
  • 2 Tbsp. fresh sage chopped (If using dried, use 3 Tbsp.)
  • 1 Tbsp. fresh thyme leaves (Use 1 1/2 if using dried)
  • 1 Tbsp. fresh rosemary, chopped (Use 1 1/2 if using dried)
  • 1 thin loaf of French bread, chopped into 1 inch cubes
  • 1 cup whole milk
  • 2 Tbsp. extra virgin olive oil
  • Salt and pepper to taste

Instructions

  • Remove apple skins and chop the apples.
  • Add 2 Tbsp. olive oil to a sauté pan on medium heat. Then add onions and sauté until translucent.
  • Add in sausage and brown. Then add in the herbs and the apples. Cook 3 minutes.
  • In a baking dish, add the French bread and then half the Gouda cheese. Then add on the sausage and apple mix.
  • Whisk together the eggs and milk and pour the mix over the contents of the baking dish.
  • Top with the rest of the cheese and a sprinkle of the herbs.
  • Refrigerate for 1 hour or overnight. Cover tightly if you are going to let this sit overnight.
  • Bake at 375 for 30-40 minutes and serve immediately.
