Throughout the seasons, I’m trying to eat more seasonally fresh meals. In the springtime, peas are one of the first vegetables to begin producing. They are cold hardy and can withstand temperatures down to 28 degrees F. Whether you’re planting peas or you buy them fresh from the supermarket, April – May and even early June in some zone is the perfect time to use peas in recipes.
Spring goodies
My spring Pea Pasta recipe with mint is a recipe inspired by the season. Not only are pea the vegetable featured, but this recipe also includes a pea pasta sauce too.
In addition to peas, other early spring goodies include daffodils and tulips. Last fall we planted bulbs from Breck’s in our stone garden bed. Brecks is an American company that’s one of the leading suppliers of Dutch imported flower bulbs. Their flowers are gorgeous and add a beautiful touch to the front of our home with our spring fairy garden space.
The daffodils will be one of the first flowers to pop up in the spring – even before the tulips – and the varieties they come in now are not your standard bright yellow blooms. Breck’s has a beautiful, wide sections of creamy whites, muted yellows and dreamy oranges. I clipped a few and bought them in to enjoy along with our dinner.

Making the spring Pea Pasta Recipe
My spring Pea Pasta recipe combines a handful of beautiful ingredients to give you a lovely seasonal dish for dinner. You can also make this Spring Lemon & Pea Pasta in under 30 minutes so it’s the perfect, quick elevated meal with a generous vegetable helping.
The recipe begins with olive oil, diced shallots, garlic and lemon zest. The lemon in this recipe will really brighten the pea flavor and the acid from it helps to round out the dish.
Unlike other spring pea pasta recipes you might find, my recipe actually creates a pea pasta sauce as opposed to just using the peas in the final product. The peas are pureed with a little olive oil and then added to the aromatics of the dish. The color is a pretty vibrant green that will coat the pasta nicely for some added flavor.
Besides that, I use some chicken broth (You can use vegetable broth if you like.), pasta water to thin out the pea pasta sauce and then season it with mint, sea salt and pepper. You can also add on some parmesan cheese, goat cheese or red pepper flakes too.
Tips for making the spring Pea Pasta recipe
- You can use fresh or frozen peas in this recipe but please do not use canned peas. You will not get the flavor or the correct consistency.
- Use the best extra virgin olive oil you can find since it is the base of the recipe.
- Use sea salt and fresh cracked pepper, not table salt and table pepper.
- Make sure to use fresh `mint in the recipe too.
- You can store the Pea Pasta in an airtight container in the fridge for up to three days. Reheat it on the microwave or in the oven with 1-2 Tablespoons of water.

Spring Pea Pasta Recipe
Equipment
- 1 large pot or pan
Ingredients
- 2 cups peas, divided
- 4 Tbsp extra virgin olive oil, divided
- 2 large shallots, diced
- 4 cloves garlic, sliced thin
- Zest of 1 lemon
- 1 cup chicken broth or vegetable broth
- 2 Tbsp. fresh squeezed lemon juice
- 1/2 cup fresh mint, chopped
- 1-2 cups salty pasta water (Begin with 1 and add the other as desired)
- 1 box spaghetti or linguini
- Optional toppings: Red pepper flakes, goat cheese, parmesan cheese or additional salt and pepper.
Instructions
- Make the pasta by boiling in a pot of salted water and cook until al dente. Reserve 1-2 cups pasta water.
- Add 1 cup of peas to a food processor or small blender andblend with 2 Tbsp. of the extra virgin olive oil. Set aside.
- Heat 2 Tbsp. of olive oil in a pan over medium. Add in the shallots and sauté for 3 minutes stirring regularly.
- Next, add in the lemon zest and the garlic and heat, stirring regularly for 2 minutes.
- Then add a cup of chicken broth or vegetable broth and simmer 2 minutes.
- Add in the pea puree and whisk to combine.
- Then add in the lemon juice and simmer over low for 5 minutes, stirring regularly.
- Add in ½ the mint and season with salt and pepper to taste.
- Add in 1 cup of salted pasta water and whisk to combine.
- Finally, add in the pasta and then add in the second cup of peas.
- Top with additional mint, red pepper flakes, and parmesan or goat cheese.
A very interesting mixture of flavors but it sounds so good! I love peas.
While this sounds amazing as is to me, I would have to leave out the mint or hubby wouldn’t touch it.
