I just returned from a week of camp with 150 6th graders and meals filled with camp food. And no offense to camp food, or the wonderful lunch ladies who helped to feed us all week, but I missed my food. That said, when I arrived home I was completely exhausted mentally, physically and emotionally from being with campers 24/7. Not only were the parents the activity group leaders 8:30 a.m. – 9:30 p.m. but we also were the cabin adults and slept with the kids too. Some of us didn’t sleep much at all. (Hi! It’s me.)
When I came home I wanted my food but needed something really simple, fresh, savory and filling. And ideally I didn’t want it to have a bunch of refined carbohydrates. One of the easiest meals in the world to make all that happen is my Sheet Pan Kielbasa and Vegetables. Not only is it simple to make but it is quick, colorful and checks all the boxes when it comes to delicious food.
Ingredients in the Sheet Pan Kielbasa and Vegetables
I use Kielbasa in this recipe because it is full of a lot of flavor without needing much else. I love how savory it tastes and I think it is one of the easier sausages to use since it is already smoked. However, you can really use any smoked sausage your family prefers.
In combination with the sausage, I use loaded up on the vegetables with zucchini, yellow squash, carrots red onion and potatoes in my Sheet Pan Kielbasa and Vegetables. The veggies are all sliced and caramelized with the sausage at a high oven temperature to maximize their flavor in this dish and make it feel like comfort food.
Spice it up
I don’t add much to the Sheet Pan Kielbasa and Vegetables but there is a spice mix I use on it that I truly love. It takes it to the next level of flavor and – very unlike me – it is all dried spices. It combines dried oregano, died parsley, dried thyme, garlic powder and paprika. Then I add a few twists of sea salt and pepper to top it all off. It’s pretty much that simple.
Roasting it all
Cooking the Sheet Pan Kielbasa and Vegetables is as easy as the rest of this recipe has been. I preheat the oven to 400 degrees and then mix the sausage, potatoes, carrots and onion with a little extra virgin olive oil and about 3/4 of the spice mix. That all gets baked together for 15 minutes. Then it is removed and I take the sausage off. Since Kielbasa is already smoked, you want to make sure you don’t overcook it. Plus, this leaves more room for the squash vegetables. Then it continues cooking for another 15 minutes.
Tips for making Sheet Pan Kielbasa and Vegetables
- As mentioned, there isn’t much to this recipe but I do recommend cutting all the vegetables at once. This way you are ready to go. If you want you can cut the squash, onion and the carrots up to two days in advance. Just keep the onion separate from the other vegetables and keep everything in an airtight container in the refrigerator.
- Make sure you do have enough extra virgin olive oil being used that the underside of the vegetables touching the sheet pan are coated. If not, you might find a few of your potato slices sticking.
- If you want this meal to feel a little beefier, serve it over some jasmine rice. My family always likes to eat it that way.
- To store it, keep it in an airtight container in the refrigerator for up to three days. Reheat in the microwave for 1-2 minutes or in a saute pan with a little extra virgin olive oil.

Sheet Pan Kielbasa and Vegetables

Ingredients
Ingredients for the sheet pan
- 4 smoked Kielbasa sausages, sliced about 1/2 inch thick Or about 1 1/4 of the longer ones sold in the grocery store or at the Butcher.
- 4-5 red potatoes, sliced about 1/2 inch thick
- 3/4 red onion, quartered
- 2-3 carrots sliced about 1/4 - 1/2 inch thick
- 2 small zucchini, sliced about 1/2 inch thick
- 2 smaller yellow squash, sliced about 1/2 inch thick
- 3 Tbsp extra virgin olive oil, divided
- Spice mix
- Additional sea salt and pepper to taste and fresh parley for topping
Spice mix
- 1 tbsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp dried parsley
- 1/2 tsp garlic powder
- 1 tsp paprika
- A few twist of a sea salt grinder and pepper grinder
Instructions
- Preheat the oven to 400 degrees and combine all the ingredients for the spice mix in a small bowl.
- Slice all the sheet pan ingredients. Separate the squash from the other ingredients.
- Add the kielbasa, potatoes, carrots and onions to the sheet pan and drizzle on half of the extra virgin olive oil. Then add on about 3/4 of the seasoning mix. Mix with your hands and ensure the extra virgin oil oil is on the bottoms of all the vegetables and the kielbasa.
- Roast for 15 minutes and then remove.
- Remove the kielbasa from the sheet pan and set aside. Cover to keep it warm.
- Add on the squash and another 1 tablespoon of extra virgin olive oil and spice mix. Mix with tongs as the sheet pan will be hot. Also, flip the potatoes, carrots and onion.
- Roast again for another 15 minutes. Add the kielbasa and any drippings back to the sheet pan and toss with tongs.
- Sprinkle with additional salt and pepper to taste and fresh parsley. Enjoy!
