Pasta is probably my favorite dinner. Out of all the dinners in the world, pasta is always one I can go to and make a million different ways to compliment however I’m feeling. This Sun Dried Tomato Pasta with chicken is one that just checks so many boxes for me. It’s creamy and it tastes like comfort food while having some sophisticated flavors that will make you feel satisfied.
I haven’t made as many pasta dishes this year because I’ve been eating more of a low carb lifestyle while losing weight. (Down 32 lbs. so far!) However, this is one of those recipes that I love to make and that my entire family loves to eat. So when we have pasta night on Sunday nights, this creamy Sun Dried Tomato Pasta with chicken is one I’ll make often.
One pot and under 30 minutes
Besides the delicious taste, my creamy Sun Dried Tomato Pasta with Chicken is one of those easy recipes that you can make with one pan and in 30 minutes.
Making pasta in one pan can be done as long as you have a nice, deep sauté pan. I love my Ninja Foodi Pan possible pan {HERE}. It’s my go-to pan for one pan meals and I have it in olive green (as you can see). I also used it for this Skillet Lasagna Recipe {HERE} and the sauce for this Creamy Chive Chicken {HERE}.
The part that takes the longest in this recipe is cooking the pasta. That takes about 15-20 minutes since the pan size is limited and the pasta soaks up all the goodness that’s already been simmering in the pan. If for some reason your pasta isn’t cooking correctly, add a little more water to the pan. Other than that, the rest of the creamy Sun Dried Tomato Pasta with chicken can be made in 10 minutes!
To make my creamy Sun Dried Tomato Pasta with Chicken
To start making this recipe, you want to cook the chicken first. As I mentioned I make it in one pan and will add extra virgin olive oil to the pan and then season cut chicken lightly with salt and pepper. I don’t usually go overboard with the seasoning because really it’s the sauce that’s the star of the creamy Sun Dried Tomato Pasta with chicken.
Once the chicken is browned nicely, I remove it from the pan and wipe the pan out.
Next, I add a little more olive oil to the pan and add a diced shallot, diced garlic, fresh basil and 2 jars of sun dried tomatoes to the pan. Before adding the sun dried tomatoes I will drain them. Also, try to find sun dried tomatoes packed in extra virgin olive oil without any other seasonings. You don’t want whatever they’re packed with to interfere with the flavor of the sauce. I like these ones {HERE}. You can also find this brand in most major grocery stores.
Once that has simmered for a few minutes, add in chicken broth and simmer a few more minutes. Then I add in noodles, water and cover. I stir occasionally as the noodles cook to keep them from sticking.
When the noodles have cooked, I add the chicken back in. Lastly, I add in some heavy cream and Parmesan and then bake with a little more fresh basil.
Tips for making Sun Dried Tomato Pasta with chicken
- Make sure to use good quality extra virgin olive oil.
- Season the chicken well with salt and pepper. While it will be covered in sauce, you want the chicken to have a little flavor on it’s own.
- Make sure to drain the sun dried tomatoes to keep the flavor and only use sun dried tomatoes packed in olive oil. No other seasonings.
- As for pasta shape, I recommend Farfalle like I used or Penne. You want something that will help hold onto some of the sauce and the shapes of these two do so nicely!
- If the pasta isn’t cooking correctly, add a little more water to the pan.
- Make sure to stir the pasta frequently. Because this is cooking in a shallow pan, the pasta can burn more easily. You can fix that with a little bit of stirring.
- Use fresh basil. Fresh herbs always make a huge difference in the flavor of a dish and you can never go wrong with fresh basil.

Creamy Sun Dried Tomato Pasta with Chicken
Ingredients
For the chicken
- 1 lb boneless, skinless chicken breasts, sliced into pieces or cubes
- 2 Tbsp. extra virgin olive oil
- Sea salt and pepper
For the Sun Dried Tomato pasta
- 3/4 -1 box farfalle pasta (or penne)
- 2 Tbsp. olive oil
- 1 medium shallot, diced
- 3 cloves garlic, diced
- 3 Tbsp. fresh basil, chopped Plus more for topping before baking and serving
- 2 cups chicken broth
- Sautéed chicken
- 2 cups water
- 1 cup heavy cream
- 1/3 cup Parmesan cheese to top
- Additional fresh basil for topping
- Additional salt and pepper to taste
- Optional: Red pepper flakes
Instructions
- Preheat the oven to 375
- Add olive oil to a warm pan and heat through. Then add chicken and cook until it is nicely cooked. Then remove chicken from the pan.
- Wipe out the pan and then add additional olive oil in. Once heated add in the shallots, garlic, basil and sun dried tomatoes.
- Simmer stirring regularly for about three minutes or until the shallots are translucent and the garlic is aromatic.
- Add in the chicken broth and simmer for about 3 minutes.
- Add in the water and the pasta. Cover and cook for about 15 minutes. Stir on a regular basis to prevent the pasta from burning.
- When it's cooked, add the chicken back to the pan and add in heavy cream. Mix well before topping with Parmesan cheese and additional basil.
- Bake for 5 minutes or until the cheese has melted.
- Serve with additional basil, sea salt and pepper to taste and a sprinkle of red pepper flakes.
This would be a perfect dinner. I know my family would enjoy it. We tend to love all pasta.
