Reuben Slider Sandwiches are easy to make and perfect for St. Patrick’s Day or a game day! They’ll be eaten in no time!
Aside from cheeseburgers, the only sandwich I ever crave is a Reuben Sandwich. It’s salty, savory, tangy and yet has a hint of creaminess from the dressing that really pulls all the flavors together. It’s one of those sandwiches that can never really be wrong, in my book.
I don’t remember exactly when I feel in love with Reuben sandwiches, but I appreciate that they’re a staple on all American Irish restaurant menus. In fact, here in Grand Rapids, they seem to be a staple on almost every pub menu.
As St. Patrick’s Day approaches, I decided to make this American twist on an Irish meal by making Reuben Slider Sandwiches.
Feeding a crowd
I love making easy slider sandwiches for my family or for family parties because they’re an easy way to feed a crowd. Plus, everyone seems to love them and they fly off the plate once they’re set out. In fact, consider making two sets of these if you are going to serve them at a party. They really go fast.
You can also bring these with you as a great appetizer if you have a 9×13 pan that you can cover.
Ingredients for Reuben Slider Sandwiches
When it comes to making Reuben Slider Sandwiches, I like to keep it as simple as possible and include all the things people expect from a delicious Reuben sandwich.
Corned Beef: Instead of making corned beef, I buy it from the deli counter and get it sliced thinly. It makes it easy to use and layer onto the sliders. However, you could also use leftover corned beef if you recently made it to make these.
Hawaiian Rolls: I’m convinced that these were conceived with the idea that they would corner the market during any party season. Let’s face it, they’re delicious and they basically come ready to layer with the goodness of your choice.
Sauerkraut: I’ve always loved sauerkraut and it’s especially amazing in this sandwich with the corned beef. Just make sure to drain the kraut first or your Reuben Slider Sandwiches will be a little soggy on the bottom.
Swiss Cheese: Also, purchased from the deli counter, I use half a slice of Swiss cheese on each slider.
Thousand Island Dressing: I used Ken’s Barbecue Thousand Island Dressing but any kind you enjoy will work for the Reuben Slider Sandwiches.

Besides layering on the normal Reuben sandwich ingredients for the Reuben Slider Sandwiches, I also add a layer on the top of the bun. This is a butter glaze that includes garlic and onion powder. It really gives the bread some nice, added savory flavor.
Then I top that off with either sesame seeds or poppy seeds. Either will work.
Tips for making Reuben Slider Sandwiches
- I like to pull the Hawaiian Rolls apart before layering the ingredients. It just makes it easier to pull them apart later.
- If you don’t have poppy seeds or sesame seeds, still add the butter to the top of the buns.
- You can make these ahead of time if you like. However, I would recommend layering everything in advance and then cooking them just before you’re ready to serve.
- You can save these in the refrigerator for about two days once they’re made. Reheat in the oven at 350 or in the microwave.

Reuben Slider Sandwiches
Ingredients
- 1 package Hawaiian Rolls
- 3/4 lb. corned beef from the deli
- 1/2 lb. Swiss cheese from the deli
- 1 32 oz. jar of sauerkraut
- Thousand Island Dressing
- 1/4 cup butter, melted
- 1/4 tsp. onion powder
- 1/4 tsp. garlic powder
- Sesame seeds or poppy seeds
- Cooking spray
Instructions
- Preheat the oven to 350 degrees and then spray a 9x13 inch pan with cooking spray.
- Cut the Hawaiian Rolls in half with a bread knife and separate the tops from the bottoms.
- Add the bottoms to the greased pan and then layer in corned beef. Use 1/2 to 1 slice of corned beef per roll.
- Add on about 1 Tbsp. to 1 1/2 Tbsp. of sauerkraut to each sandwich.
- Fold the Swiss cheese in half and then quarter it. Add two quarters to each roll.
- Using a butter knife, spread Thousand Island Dressing on the top of each bun and then place it on the sandwich.
- Mix melted butter, garlic powder and onion powder. Then brush the top of each sandwich. Sprinkle with sesame seeds or poppy seeds.
- Lightly cover with tin foil and bake for 10 minutes. Then remove tin foil and bake another 10 minutes.
- Serve immediately!
My husband loves reubens so I will keep this in mind for a future dinner. He will be excited!

These Rueben sliders are going on my menu for St. Patrick’s Day. We entertain our family and friends with a St. Paddy’s meal, and this year I’m serving potato leek soup and these sliders!!!
