Ingredients

Ingredients for the sheet pan

  • 4 smoked Kielbasa sausages, sliced about 1/2 inch thick Or about 1 1/4 of the longer ones sold in the grocery store or at the Butcher.
  • 4-5 red potatoes, sliced about 1/2 inch thick
  • 3/4 red onion, quartered
  • 2-3 carrots sliced about 1/4 - 1/2 inch thick
  • 2 small zucchini, sliced about 1/2 inch thick
  • 2 smaller yellow squash, sliced about 1/2 inch thick
  • 3 Tbsp extra virgin olive oil, divided
  • Spice mix
  • Additional sea salt and pepper to taste and fresh parley for topping

Spice mix

  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp dried parsley
  • 1/2 tsp garlic powder
  • 1 tsp paprika
  • A few twist of a sea salt grinder and pepper grinder

Instructions

  • Preheat the oven to 400 degrees and combine all the ingredients for the spice mix in a small bowl.
  • Slice all the sheet pan ingredients. Separate the squash from the other ingredients.
  • Add the kielbasa, potatoes, carrots and onions to the sheet pan and drizzle on half of the extra virgin olive oil. Then add on about 3/4 of the seasoning mix. Mix with your hands and ensure the extra virgin oil oil is on the bottoms of all the vegetables and the kielbasa.
  • Roast for 15 minutes and then remove.
  • Remove the kielbasa from the sheet pan and set aside. Cover to keep it warm.
  • Add on the squash and another 1 tablespoon of extra virgin olive oil and spice mix. Mix with tongs as the sheet pan will be hot. Also, flip the potatoes, carrots and onion.
  • Roast again for another 15 minutes. Add the kielbasa and any drippings back to the sheet pan and toss with tongs.
  • Sprinkle with additional salt and pepper to taste and fresh parsley. Enjoy!
