Preheat the oven to 400 degrees and combine all the ingredients for the spice mix in a small bowl.
Slice all the sheet pan ingredients. Separate the squash from the other ingredients.
Add the kielbasa, potatoes, carrots and onions to the sheet pan and drizzle on half of the extra virgin olive oil. Then add on about 3/4 of the seasoning mix. Mix with your hands and ensure the extra virgin oil oil is on the bottoms of all the vegetables and the kielbasa.
Roast for 15 minutes and then remove.
Remove the kielbasa from the sheet pan and set aside. Cover to keep it warm.
Add on the squash and another 1 tablespoon of extra virgin olive oil and spice mix. Mix with tongs as the sheet pan will be hot. Also, flip the potatoes, carrots and onion.
Roast again for another 15 minutes. Add the kielbasa and any drippings back to the sheet pan and toss with tongs.
Sprinkle with additional salt and pepper to taste and fresh parsley. Enjoy!
