We are down to the last few minutes before the holidays and I’m scrambling to get it all done in time. Last minute gifts, last minute décor and even last-minute recipes are all on my mind.
If you’re a touch frantic before the holidays like I am then you know you don’t want to do anything else difficult when it comes to watching for the guy in the big red suit or making a holiday meal your family will love.
In light of that, I thought you might love this Prosciutto & Brie Crostini Toasts as much as I do. It’s delicious, it’s easy and it takes almost no time at all. It’s perfect for those last few hectic hours before any big celebration. They’re fancy enough for a party and simple enough for a low-key New Year’s Eve at home, which is what we always do.
Flavor combinations to fall for
Brie is one of my favorite cheeses – somewhere next to goat cheese and before parmesan and even ricotta. I love how creamy it is and the subtle flavor it can add to any dish. But it’s really perfect around the holidays when paired with a few other winter-like flavors like pomegranate and fig.
Prosciutto is a meat that I could eat daily. I eat it on salads like this Beet & Apple Salad, in sandwiches and even add it to the tops of my pasta. While not specifically a winter flavor, it always goes so well with seasonal sweet flavors like the fig jam and pomegranates in this recipe. It also compliments the brie just perfectly with its salty flavor.
All the flavor in one little bit
There’s so many flavors happening in each bit of this Prosciutto & Brie Crostini Toast that you’ll be surprised that it’s really just a handful of ingredients.
First, I start off with making a crostini from a baguette of French bread. I broil it in the oven with a little olive oil on top for about a minute and a half.
Then, I layer on a fig spread. These can usually be found by the imported cheese section of the grocery store. Wherever you buy your wheel of brie or a wedge of parmesan, you can usually find the fig jam.
Next I add on a square or two of brie. After that I layer on half a piece of prosciutto and another square or two of brie.
All of that gets baked and topped off with pomegranate seeds, chopped fresh rosemary and bits of thyme.
It’s really all about layering in the flavors.
Simple and handheld
Once you layer everything together, there really isn’t a lot to the Prosciutto & Brie Crostini Toasts. And that’s what I truly love about them. They’re simplicity at its best in these last few frantic days.
They take only a few minutes to cook up because you’re really just melting the cheese. Then you can serve them directly on the baking sheet or add them to a cutting board like I did and sprinkle them with the last few items.
They’re also easily handheld for people that want to grab one at a time, but more thank likely, they’ll be back for more. 🙂
Tips for making Prosciutto & Brie Crostini Toasts
- This recipe moves fast so have all your ingredients prepped and ready to go. This includes chopping of the herbs and the pomegranate seeds. Honestly, the part that takes the longest in this recipe is pulling the pomegranate seeds out.
- Use a good quality wheel of brie. I use almost the whole wheel so don’t go with a wedge.
- If you’re having trouble finding the fig jam, check next to the imported cheese section at the grocery store. It’s usually there. You can find the exact spread I use {HERE}.
- You can use pre-made toasts for this recipe if you like. I get it if you need to save time.
- If you’re using the French bread as I suggest, make sure to watch the broiler! Thirty seconds too long under it and the toasts will be charred.
- Fresh thyme and fresh rosemary are best, but if you can’t find them then you can use dried. It just doesn’t pack the same flavor and it’s usually harder from being dried.

Prosciutto & Brie Crostini Toasts
Equipment
- Baking sheet
Ingredients
- 1 loaf French bread
- 2 Tbsp. extra virgin olive oil
- 1 8.5 oz Fig spread
- 1 wheel brie cheese, cut into small square slices
- 2-3 packages prosciutto package - 3 oz. per package
- 1 pomegranate or 1/2 cup pomegranate seeds
- 2 Tbsp. fresh rosemary, minded
- 2 Tbsp. fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Slice French bread about 1/2 inch to 1 inch slices. Brush with olive oil and broil for 1 minute and 30 seconds. Don't go over 2 minutes.
- Preheat oven to 375.
- Add fig spread onto the bread slices with a knife.
- Layer in cut brie and add 1/2 piece of prosciutto.
- Add additional piece or two of brie on top of the prosciutto.
- Bake for 5-10 minutes or until the brie is melted.
- Removed and immediately add on pomegranate seeds, fresh thyme and fresh rosemary. Salt and pepper to taste. Serve and enjoy!
