My Parmesan & Prosciutto Egg Bake recipe is a delicious and easy recipe to make for breakfast, brunch or even an easy lunch and dinner. This recipe for an egg bake can be customized in any way that you like but I’m going to show yo my favorite way to eat it!
My chickens are laying eggs again! With the end of winter around the corner (hopefully) the sun is staying out just long enough for my chickens to start their normal schedule again. It’s so strange because I never think I’ll miss the eggs if we were to someday give up our chickens, but then when I have to buy eggs in the dead of winter I always miss them. This year I’ve promised myself I will utilize their gifts better and start making more with their eggs. To start I created this delicious recipe for an egg bake with Parmesan and Prosciutto that I can easily see me making once a week going forward.
Ingredients in my recipe for an egg bake
I’ve included some of my favorite ingredients in my recipe for Parmesan & Prosciutto Egg Bake. And you’ve probably already guessed two of them based on the recipe title. However, in addition to parmesan and prosciutto, I’ve included a mix of spinach and arugula, fresh basil, fresh chives, fresh thyme, sea salt and fresh cracked pepper. These simple ingredients really pack a lot of flavor into this dish and make it one unforgettable meal.
I made my recipe for an egg bake for a fast lunch, but this would also be great as a breakfast, brunch or even easy dinner recipe. Additionally, I served it up with some bread, but you could eat it alone. Eating the Parmesan & Prosciutto Egg Bake without the bread makes it the perfect low carb meal too.
Perfectly customizable
When I made this recipe for an egg bake, I wanted to make sure the flavors incorporated would be flavors that I love and often have on hand. That said, I almost always have prosciutto in the refrigerator and I ALWAY have parmesan. Those became two big secondary ingredients for me here. However, if you don’t have prosciutto, maybe regular ham is your thing? You can swap it out. No parmesan? Ty cheddar!
Here’s a few other great options:
- Sun dried tomatoes
- Regular tomatoes or cherry tomatoes
- Roasted Red Peppers
- Bacon (Sprinkle it on top when the eggs are done.)
- Turkey – Either the lunch meat version or some holiday leftovers!
- Broccoli
- Kale
Tips for making my Parmesan & Prosciutto Egg Bake
- Make sure to use a high quality extra virgin olive oil for this recipe for an egg bake. It will make all the difference flavor-wise.
- Use fresh herbs if at all possible. Again, these will give you the very best flavor!
- I make my recipe for an egg bake in a 9×9 pan. However, you can double the recipe and use a 9×13. The recipe in the 9×9 pan will serve 4-6 people. The 9×13 pan will serve around 10 people.
- You can also make this with just the egg whites if you like but then double the eggs you use.
- Additionally, you can scramble the eggs in this. Do that in another bowl before adding them to the pan and add about 1/4 cup of milk to the recipe.
- You can store this for about 1 day in the refrigerator. However, I do not actually recommend making this ahead of time. I saved mine and ate some the next day and it was fine, but the fresher, the better. If you want to get ahead on making it, chop the herbs in advance and refrigerate them until needed.

Parmesan and Prosciutto Egg Bake
Equipment
- 1 9x9 baking pan See tips above for using a 9x13 pan
Ingredients
- 7 eggs
- 1 cup fresh spinach and arugula mix You can also use just spinach, but this combo is often sold together.
- 1/3 cup Parmesan cheese, grated
- 4 pieces of prosciutto, torn
- 2 Tbsp. basil, chopped
- 1 Tbsp. fresh thyme, chopped or using just the leaves
- 1 Tbsp. fresh chives, chopped
- 1 Tbsp. extra virgin olive oil Plus additional for topping bread and eggs. Total will be based upon the number of people being served.
- Sea salt and fresh cracked pepper to taste
- Optional: French baguette, sliced with olive oil
Instructions
- Preheat oven to 350 degrees.
- Wipe down the baking pan wit the 1 Tbsp. of olive oil. Then add the spinach and arugula mix.
- Next add the egg on top. Then add in the prosciutto.
- Layer on the fresh herbs and the cheese.
- When the oven is pre-heated, bake for 10-20 minutes depending on the doneness you want in the eggs.
- If serving with bread, slice the bread and brush on the extra virgin olive oil.
- When the eggs are cooked, remove from the oven and serve immediately.
- Add sea salt and fresh cracked pepper to taste.
This would be such an amazing breakfast. Heck, I’d have it any time of the day. Yummy!
