Our broccoli always seems to come up in the summertime despite it being a fall vegetable. Then once I remove the center crown, baby crowns will pop up all around the edges for the rest of the summer. I love that we can get broccoli through the season and I’ve been trying to use it more as a snack in our family and not just a side dish. I made these Baked Breaded Broccoli Bites as a way to encourage my kids (and frankly myself) to eat it more often. Broccoli is honestly my favorite vegetable and anytime I can find more ways to eat it, I will gladly…eat it. And these Breaded Broccoli Bites just so happen to make a delicious, fast and easy appetizer too!

I decided to bake these Breaded Broccoli Bites because I wanted to make them in a way that everyone could access. A lot of recipes out there tend to be made in air friers now and while I have one, sometimes I just prefer the oven. That said, these will work in the air frier and they will also work in a regular frier too.
These bake up in about 20 minutes at 400 degrees and become perfectly gold brown and nice and crispy.
Ingredients included in the Breaded Broccoli Bites
I love these Breaded Broccoli Bites not only because they’re easy but also because they’re so flavorful! The ingredients in my Breaded Broccoli Bites include Panko Bread crumbs for that nice crispy texture, finely grated Parmesan cheese and a mild cheddar cheese. I also add in a garlic spice mix and a decent amount of salt. The salt and the garlic helps to bring out all the flavors and it keeps the parmesan from being the dominant flavor by helping the broccoli taste to stand out.
The bread crumbs stick to the broccoli with an egg and milk mix. It can be a little bit of a challenge to get things to stick to broccoli perfectly. Once the broccoli is coated I recommend really pushing the breadcrumb mix into between all the individual stems on each piece and into the floret heads. Tips for making my Baked Breaded Broccoli Bites
- Make sure to use the Parmesan Cheese that is finely grated from the refrigerator section. You want the coarse, very fine cheese not the longer shredded pieces and you don’t want to use the off-the-shelf grocery aisle grated. The one from the deli section by the other cheeses works best and is fresher.
- I like a mild cheddar for this recipe but you can use what you prefer.
- To get everything to stick to the broccoli, you really have to cram it in there. Push the mix between the the broccoli head and in between the small stalks.
- Make sure to leave enough room between the broccoli pieces on the baking sheet for the air to get around the sides. You can fit more than I have shown here on one baking sheet but maybe one more per row.

Baked Breaded Broccoli Bites

Ingredients
- 1 1/2 - 2 heads of broccoli, individual florets removed and washed
- 1 cup Panko bread crumbs
- 3/4 cup finely grated Parmesan cheese from the deli section
- 3/4 cup mild cheddar cheese
- 3 eggs
- 1 Tbsp. milk
- 1 tsp garlic powder
- 3/4 tsp. sea salt
- 1/2 tsp. garlic salt
- Spray olive oil
Instructions
- Preheat the oven to 400 degree and line a baking sheet with parchment paper.
- Mix together eggs and milk in one bowl. In a separate bowl mix together the bread crumbs, spices and cheeses.
- Dip each piece of broccoli into the egg mix and make sure it is covered, including between the individual stems on the florets.
- Next, put them in the breadcrumb mix and coat them, covering the stems and crowns fully and pushing the mixture between the individual stems and heads.
- Lay them on a lined backing sheet and spray with a spray olive oil. Then back for 20 minutes.
- Remove from the oven and enjoy with ranch or creamy garlic!
