I love using the freshest produce to cook with seasonally, and I thought it would be fun to share a monthly in season produce selection. These lists will help you understand the freshest vegetables to use in your recipes each month. I’m starting this month (April) and will go through next March so this is the beginning of a monthly column. Here is the April in season produce you can buy now to make delicious dinners for your family.
Arugula
Arugula is one of those leafy greens that I adore! I will keep it in the fridge all year round and mix it in with lunches. It is a cold hardy green so it is popping up on farms right now making it one of the freshest things you can find in the grocery store. It is perfect in quick salads, mixed with rice or pasta, on sandwiches and even mixed in with eggs.
Asparagus
Did you know it takes three years for your first asparagus crop to sprout? I’ve never planted it for this reason but I feel like that makes it an extra special part of the April in season produce. It is worth the wait! Try it simply roasted, in soup, in salads or garnished with delicious things like in my Mediterranean Grilled Asparagus {HERE}.
Artichokes
April is smack dab in the middle of artichoke season, which begins in March. It goes through May and you can find plump and juicy artichokes right now. It has a second season in the fall but nowhere near the same kind of yield. Try my Stuffed Artichokes recipe {HERE}.
Broccoli
April in season produces includes the beginning of broccoli season. It can be found growing in warmer climates already and the produce will be so fresh and large in the grocery store. Most places can grow broccoli now through late June or even early July.
Brussels Sprouts
Brussels Sprouts take a long time to grow and can be found now and then again in the fall. They are a slow growing vegetable and mature when the days are cool. The warmer zones will have them popping up this time of year. Try my Brussels Sprouts & Bacon recipe {HERE}. It is always a winner!
Carrots
Like Brussels Sprouts, carrots can be found now as part of the April in season produce and then again later in the season. They don’t mind cool weather and the warmer zones can usually plant them out in January for an early spring harvest.
Cauliflower
Like Broccoli, Cauliflower is an April in season produce item that thrives in cooler weather. It pops up now through the end of June so enjoy all of that fresh cauliflower you find in the grocery store. Try my Italian Roasted Cauliflower Steaks {HERE} too!
Swiss Chard
This leafy green is in a family with beets and spinach and can be abundant right now! If you have never tried anything with this April in season produce veggies, now is the perfect time.
Citrus
We are at the tail end of citrus season in April and still enjoying all the sunshine-y produce. I love to cook with lemons during this time of year! They will be abundant in the grocery store and give your food such a spring-like flavor. Try it in my Lemon Chicken Orzo Soup {HERE}!
Fennel
Fennel shows up now and in the fall in grocery stores. It is perfect in salads, with pasta and with sausage. Try it in my Sausage and Fennel Pasta {HERE}.
Leeks
Leeks love the cool weather so they will be a staple in for April in season produce. Try them in my Potato & Leek Soup! {HERE}
Mustard Greens
April starts off the harvest of mustard greens and you can find them at their peak flavor in the grocery store. These are wonderful just simply sautéed or mixed in with a salad.
Radishes
Radishes are just coming into season in April and while most people think of them as a garnish in a salad, you can use them in many ways! Try my Buttered Roasted Radishes {HERE}.
Spinach
Fresh spinach is a joy to find in the grocery store. Check out the truly fresh cuts of it right now, not the prepackaged bags. Its flavor will be phenomenal and something to enjoy!
Spring Garlic
If you have never heard of spring garlic, it is essentially garlic that does not produce a large bulb. It begins popping up fresh in April and can be enjoyed just like garlic or green onions.
Spring Onions
These are also green onions and like the garlic, you can find them popping up now in grocery stores (and in gardens in warmer zones). Enjoy them on everything!
