Are you a pumpkin pie fan? What about an ice cream fan? I’m both. Ice cream is my weakness and pumpkin pie is probably my favorite kind of pie. So, I thought it might be time to combine them into a Pumpkin Pie Shake. But not just any Pumpkin Pie Shake, a Salted Caramel Pumpkin Pie Shake. And oh this drink! It’s like kismet for food.
Do you like cold fall flavors?
I think that sometimes it can be hard to wrap your head around liking fall flavors in cold form. For instance, I think the Pumpkin Spice Frappuccino or Iced Latte at Starbucks are disgusting. I just can’t get around my mind block of fall flavors needing to be warm with their cold drinks. So, I was actually hesitant in making this. Would it even be something that I like? Would it be something that I like enough to give to you?
Turns out, combining cinnamon and sugar and spice with ice cream and milk is a totally different experience for me. The Salted Caramel Pumpkin Pie Milkshake is a delicious, meant-to-be fall dessert that’s sweet with a little bit of warmth from the cinnamon.
Chicago inspiration behind the Pumpkin Pie Milkshake
In Chicago there is a restaurant chain called Portillos. It’s a hotdog and Italian beef quick-serve restaurant that I desperately miss living in Michigan. They also have a shake there called the Chocolate Cake Shake, where they mix their Chicago famous Chocolate Cake with chocolate ice cream to give all chocolate lovers a delicious, blended dessert.
That milkshake inspired me to make this milkshake. It’s not quite the same thing because I don’t directly mix pumpkin pie with the ice cream. But, it is a similar idea when it comes to flavoring.
Ingredients in the Salted Caramel Pumpkin Pie Milkshake
Instead of throwing pumpkin pie into the Salted Caramel Pumpkin Pie Milkshake, I wanted to be more deliberate with my flavoring. I included real pumpkin, which I made from this recipe {HERE}, vanilla bean ice cream, milk, pumpkin pie spice, extra cinnamon and brown sugar to balance out some of the spice.
Additionally, I wanted to kick it up a notch. I added a layer of crushed cookies and caramel with some flakey sea salt. When you get a bite of everything together with a little of that salt it is just incredible.
Serving size for the Salted Caramel Pumpkin Pie Shake
So, these pretty photos of the shake I made are in 20 oz. glasses. I do not recommend using glasses this large. I used these for dramatic effect. 🙂 I do recommend using 8 -10 oz. glasses and making these much more petit in size.
In fact, in making these for my family I usually serve them in 8 oz. Ball Canning jars and cut the straw in half. Or we go straight to the spoon instead. And when these are mini-sized, I tend to make the band of crushed cookies much smaller.
Tips for making the Salted Caramel Pumpkin Pie Shake
- As I mentioned, I would make this in a smaller glass unless you have the stomach and metabolism of a teenage boy.
- I used Nilla Waffers to make this but you can also try it with graham crackers if you prefer them.
- I do recommend keeping the ice cream Vanilla BEAN as opposed to another variation of vanilla. The flavor in Vanilla Bean ice cream is so much richer and that will add to the Salted Caramel Pumpkin Pie Milkshake.
- Do use any other kind of salt other than sea salt. I have to order it if I’m looking for the flakey kind and you can find that {HERE}. But the rock sea salt might work ok too.
- I use a full-sized ninja blender that you can find {HERE} and I recommend using a full-sized blender too. Because some of the measurements are so small, you can’t half them as well as you could larger measurements. Plus, you’ll want to make these for the whole family, right?

Salted Caramel Pumpkin Pie Milkshake
Equipment
- Blender
Ingredients
- 6-7 large scoops of Vanilla Bean Ice cream
- 3/4 cup pumpkin puree, unsweetened
- 1/3 cup milk I use whole because that's what we drink.
- 1/4 cup brown sugar
- 1/2 tsp. pumpkin pie spice
- 1/2 tsp. cinnamon
- 1/4 tsp. vanilla extract
- 1/2 box Nilla Waffers or graham crackers, crushed
- Whipped cream
- Caramel sauce I use the Torani brand, which is the same that you might use with topping a coffee drink.
- Flakey sea salt
Instructions
- Crush cookies in a plastic bag with a potato masher or a metal spoon.
- Blend together ice cream, pumpkin, milk, brown sugar, vanilla and spices.
- Layer in some of the crushed cookies on the bottom of the glass.
- Add a layer of caramel above that and sprinkle with sea salt.
- Add in some of you pumpkin pie milkshake to about the halfway point.
- Add in another later of cookie, caramel and sea salt.
- Fill the glass the rest of the way with the milkshake.
- Top with whipped cream. Add on more crush cookie, a drizzle of caramel and a sprinkle of sea salt.
- Serve immediately
