One of my favorite things about flank steak is how easy it is to infuse it with flavor. A marinade for flank steak is an easy, hands-off-kind-of-way. This Tequila Lime Marinade for flank steak on the grill is the most delicious marinade I’ve ever had.
Another of my favorite things about flank steak on the grill is how fast it cooks. We grill this flank steak for about six minutes per side over medium heat. Give it eight minutes per side if you like it a little more pink and less red, but you really don’t want to go over that.
Making flank steak on the grill tender
Flank steak has a reputation for being tough and not of great quality. However, when you make a marinade for flank steak and give it a little time, you will be surprised at how tender, delicious and crave-able it can actually be. This Tequila Lime Flank Steak om the grill is so delicious that Kevin and I can usually eat one whole flank steak between the two of us.
Tequila Lime Marinade for Flank Steak
The flavor for the Tequila Lime Flank Steak comes from the marinade. It has an amazing and delectable taste that’s something you will want to eat over and over again. It does use tequila but it cooks off during the grilling process. Other than that it includes a healthy dose of fresh squeezed lime juice, some soy sauce and a blend of herbs and spices that keeps this flank steak on the grill exploding with flavor.
The Tequila Lime Marinade for flank steak only takes a few minutes to make and then you don’t have to worry about doing anything else. I like to add it to a large Tupperware container and pour the ingredients for the marinade right on top. There’s enough liquid that it should cover the flank steak. I cover it with a lid, give it a little shake and then stick it in the refrigerator for three hours.
Tips for cooking flank steak on the grill
- This marinade needs 3-6 hours to tenderize the meat. We’ve made this a couple times and have found this to be the sweet spot for the flavor. We’ve also let it sit in there for 24 hours before and I don’t recommend that. It comes out a bit too tangy if you let it go too long.
- Make sure to cook this over medium. Whether you’re cooking on the Weber grill like we have, on a Traeger grill like we have (Yes, we have two grills) or inside on a cast iron grill, you want to make sure the heat is consistent. When we have cooked this on the Traeger, the grill does most of the work. You can see our experience with that {HERE}. We’ve cooked this using all three methods and really they all come out tasting delicious.
- Make sure to give the meat time to rest before cutting into it. I would give it at least 5 minutes. If you can keep it somewhere that will hold the temperature, you can give it 10 minutes.
- Flank steak is extremely lean and doesn’t need any trimming. However you may want to tenderize it a bit with a meat tenderizer. Just don’t over-do it and make it too flat or it will alter the cooking time.

Tequila Lime Flank Steak on the Grill
Ingredients
- 1.5 - 2 lb. Flank steak
- 1 cup fresh squeezed lime juice You will need 6 - 10 limes for this.
- 1/2 cup blanco tequila
- 1/3 cup soy sauce
- 1/2 cup fresh cilantro
- 1 Tbsp. of garlic, grated or chopped
- 1 jalapeno, sliced and seeds removed Leave the seeds in if you like things spicy!
- 1/2 Tbsp. ground black pepper
- 1/2 tsp. ground cumin
Instructions
- Add flank steak to an air-tight plastic container and add in all the marinade ingredients.
- Seal the container and give is a little shake.
- Refrigerate for 3-6 hours.
- Pre-heat the grill to medium. Give it about 10 minutes to warm up.
- Remove the flank steak from the marinade and grill about 6 minutes per side. If the flank steak is thicker or you like it more well done, you can cook 8 minutes per side.
- Let the flank steak rest for about 5 minutes before cutting it. Then serve immediately.
Oh yes, what a fabulous flavor. We love flank steak so we’ll have to have this for dinner one night.
