Ingredients

Ingredients for the grilled asparagus

  • 1 bunch asparagus
  • 1/2 cup cherry tomatoes, halved
  • 1 English cucumber, diced
  • 1/4 cup Kalamata olives, sliced
  • 2 Tbsp. extra virgin olive oil
  • Parsley to top
  • Additional feta as desired
  • Salt and pepper to taste
  • Lemon zest

Ingredients for the feta lemon sauce

  • 1.5 cups Greek yogurt
  • 2.5 Tbsp. lemon juice, fresh squeezed
  • 1 Tbsp. extra virgin olive oil
  • 3 Tbsp. feta cheese Note: You can also make this without the feta if you're not a fan.
  • 2 Tbsp. dill, chopped
  • Zest of 1 small lemon
  • Salt and pepper to taste

Instructions

  • Heat your grill on medium heat.
  • Wash the asparagus and chop the ends off. Brush each stalk with some of the olive oil on both sides.
  • Add the asparagus to the grill and cook about 5 minutes on each side.
  • While the asparagus cooks, chop top vegetables for the topping.
  • Combine all the ingredients for the feta lemon sauce in a food processor and blend until smooth.
  • Once the asparagus is finished, plate and then spoon the sauce over the top. Add the fresh Mediterranean vegetables and parsley and serve.
