This Pasta with White Wine Butter Sauce and Blistered Tomatoes is truly a 20 minute recipe that is so simple, delicious and fresh you’ll want to make it everyday. It’s one of my favorites once the cherry tomatoes start ripening on the vine! Save the recipe below so you have it each tomato season!
Summer is truly winding down over here but we are still getting plenty of tomatoes from the garden. It’s been our most successful tomato season ever and I’m loving every minute of it using them in recipes from tarts to salads to pastas. Last weekend I made White Wine butter Sauce Pasta with blistered tomatoes, and it was a delicious Sunday meal to celebrate tomatoes.
Cherry tomato love
I’ve never loved cherry tomatoes much, but this summer it seems to be all I’m craving. Which is a good thing, because we grew a lot of them. I used two varieties for the Pasta with white wine sauce and blistered tomatoes. They include: Rapunzel Tomatoes and Orange Zinger tomatoes. They’re both sweet and yet savory and just incredible with the White Wine Butter Sauce Pasta with blistered tomatoes.
We will be growing both of these varieties again next year in conjunction with a few others. I’m not inspired to see what other cherry tomatoes will make my taste buds happy.
How to make White Wine Butter Sauce Pasta
I know that the sauce for this sounds heavy. White wine butter sauce pasta is a bit indulgent and decadent. But for all the beautiful ingredients in this, the dish itself doesn’t feel overly filling or cumbersome. In fact, it’s a fairly mild tasting sauce this perfectly accentuates the pasta and is complimented by the tomatoes.
The simple sauce includes shallows, garlic, butter, white wine and some pasta water. That’s it. It’s perfect to serve with this pasta, but you can also make the sauce on it’s own and serve it with chicken, fish or shellfish. If you’re looking to serve a protein with this White Wine Butter Sauce Pasta and Blistered Tomatoes, I would recommend one of those dishes. You could also add pancetta to the top of it.
30-minute success
One of my favorite things about our Pasta Sunday meals is that I can usually make them in under 30 minutes. For us Sunday is a big project and chore day – especially in the spring, summer and fall. We are always tired by the time dinner rolls around, but I still want a delicious dinner. I appreciate that this White Wine Butter Sauce Pasta with blistered tomatoes is yet another meal that I can make quickly. And even when summer is gone, I can easily get all these ingredients from the grocery store to make this simple pasta dish all year long.
Tips for making White Wine Butter Sauce Pasta with blistered tomatoes
- Remember to use a good, quality extra virgin olive oil.
- Remember to reserve some of your pasta water for this.
- Add a squeeze of lemon if you want to make a lemony version of the White Wine Butter Sauce Pasta.
- I serve this pasta with spaghetti, but you can serve it with your favorite noodle. The sauce sticks really wall to long noodles like spaghetti, fettuccini, linguine, angel hair and more.
- You can also try making your own pasta! I promise it isn’t that difficult when using this Kitchen Aid attachment {HERE} that we have.

Ingredients
Pasta with White Whine Butter Sauce and Blistered Tomatoes Ingredients
- 1 16 oz. box spaghetti
- 2 Tbsp. olive oil
- 1 shallot diced
- 1 cup white wine, divided
- 3 large cloves of grated garlic
- 2 cups whole cherry tomatoes
- 1 stick butter, salted
- 1/2 cup pasta water
- 2-3 spheres of burrata
- 1/4 cup basil leaves
- Salt and pepper to taste
Instructions
Pasta with White Wine Butter Sauce & Blistered Tomatoes Instructions
- Boil water in a large pot with salt. Use about 2 tsp. of salt. Once boiling add pasta. Reserve 1/2 cup of the water to use in the sauce.
- Heat a separate large pan and add olive oil over medium heat. Then add in the shallots and continuously stir so they begin to caramelize.
- Turn heat to low and then add 1/2 cup of white wine.
- Add in the grated garlic and continuously mix. Cook about 2 minutes.
- Add in cherry tomatoes.
- When tomatoes begin to burst, add in the butter and additional white wine.
- Add in pasta water and let simmer on low for about 5 minutes.
- Add in the pasta and mix.
- Add to a bowl and top with the burrata, basil and salt and pepper.
I just made this and it was ab fab! I added in some shredded rotisserie chicken that I had and subbed ricotta for the burrata because that’s what I had in the fridge. Will be making it again many times throughout the summer!
