Ingredients

Pasta with White Whine Butter Sauce and Blistered Tomatoes Ingredients

  • 1 16 oz. box spaghetti
  • 2 Tbsp. olive oil
  • 1 shallot diced
  • 1 cup white wine, divided
  • 3 large cloves of grated garlic
  • 2 cups whole cherry tomatoes
  • 1 stick butter, salted
  • 1/2 cup pasta water
  • 2-3 spheres of burrata
  • 1/4 cup basil leaves
  • Salt and pepper to taste

Instructions

  • Boil water in a large pot with salt. Use about 2 tsp. of salt. Once boiling add pasta. Reserve 1/2 cup of the water to use in the sauce.
  • Heat a separate large pan and add olive oil over medium heat. Then add in the shallots and continuously stir so they begin to caramelize.
  • Turn heat to low and then add 1/2 cup of white wine.
  • Add in the grated garlic and continuously mix. Cook about 2 minutes.
  • Add in cherry tomatoes.
  • When tomatoes begin to burst, add in the butter and additional white wine.
  • Add in pasta water and let simmer on low for about 5 minutes.
  • Add in the pasta and mix.
  • Add to a bowl and top with the burrata, basil and salt and pepper.
