Boil water in a large pot with salt. Use about 2 tsp. of salt. Once boiling add pasta. Reserve 1/2 cup of the water to use in the sauce.
Heat a separate large pan and add olive oil over medium heat. Then add in the shallots and continuously stir so they begin to caramelize.
Turn heat to low and then add 1/2 cup of white wine.
Add in the grated garlic and continuously mix. Cook about 2 minutes.
Add in cherry tomatoes.
When tomatoes begin to burst, add in the butter and additional white wine.
Add in pasta water and let simmer on low for about 5 minutes.
Add in the pasta and mix.
Add to a bowl and top with the burrata, basil and salt and pepper.
