I think it is time to declare it to be baking season. We are more than halfway through August and while I don’t feel quite ready to break out the apples and start making whole pies, I do feel ready for some simple, home cooked, easy baked goods that leave me with a warm feeling in my belly like homemade peach cobbler. And my Oatmeal Peach Cobbler with fresh peaches is the way to go when it comes to making a recipe to bridge the seasons.
I would consider myself a fall person. We were married in the fall and it’s really my favorite time of the year. I love the clothes (Thank God the pressure of swimsuit season is over!) and I adore the flavors that help to usher in the cooler weather. I love this dessert is a bridge dessert. The peaches still scream summer to me but my homemade peach cobbler topping also includes a few of those warm fall flavors.
A seasonal must-make
Cobbler is easily one of my favorite desserts. In a race between chocolate upon chocolate or warm fruit cobbler, cobbler wins each time. Specifically, this Homemade Peach Cobbler with fresh peaches is a dessert we make at least once a year for our family. And, it has a secret ingredient that make it taste incredible – leaving one foot in summer while welcoming in fall.
The secret ingredient
This Homemade Peach Cobbler recipe is peach cobbler made with fresh peaches and it’s made from scratch. It’s so easy to make it with fresh peaches and a homemade topping. And I won’t keep you in suspense. 🙂 My secret ingredient in this is oatmeal and it makes it taste just like an oatmeal cookie on top of the warm, gooey peaches. The peaches still give us all the sweetness of summer, but the oatmeal topping full of cinnamon and nutmeg gets us in the mood for the full-on flavors of fall.
How to make Homemade Peach Cobbler with fresh peaches
Using fresh peaches in the Homemade Peach Cobbler is simple. You can slice them or you can dice them into bite-sized pieces, and it takes just a few minutes in the refrigerator to get them ready to bake.
To make the Homemade Peach Cobbler with fresh peaches all you need to do is slice the peaches and mix them with a few of the other ingredients. They need to be refrigerated for about 10 minutes and while they are in there, you can make the topping.
The topping will be a little drier than you might imagine. It has the consistency of a drop-biscuit and will spread out and rise as it bakes.
Tips for making Oatmeal Peach Cobbler
- Prior to slicing the peaches, you need to peel them. You can do this by adding them to boiling water for about 30 seconds and peeling them. OR, you can peel them with a potato peeler, which is what I do. I have this one {HERE}.
- To make the topping for the Homemade Peach Cobbler with fresh peaches you will need to cut the cold butter into the dough. You can do this the most easily with a pastry cutter {HERE}. You can use a fork but it will take more effort to work it in.
- I recommend topping this right away with some vanilla bean ice cream! You won’t regret it. 🙂

Oatmeal Peach Cobbler with fresh peaches
Ingredients
Peach Filling Ingredients
- 6-8 large peaches, peeled and sliced
- 1/4 cup sugar
- 2 tsp. corn starch
- 1 tsp. ground cinnamon
- 1/8 tsp. nutmeg
- 1/2 Tbsp. vanilla extract
Oatmeal Topping ingredients
- 2 cups flour
- 1 and 1/2 cups raw regular oats
- 1/4 cup brown sugar
- 1/4 cup white sugar
- 1 stick of cold butter
- 1/2 cup hot water
- 1 and 1/2 Tbsp. Baking powder
- 1/2 tsp. salt
- Optional: Vanilla bean ice cream and additional cinnamon for topping
Instructions
Oatmeal Peach Cobbler with fresh peaches
- Preheat your oven to 375 degrees and remove the skin from your peaches with a vegetable peeler.
- Combine sliced peaches in a bowl with all the other items for the peach mixture listed in the ingredients. Mix well so the sugar can begin pulling the juices out of the peaches. Cool in the refrigerator for 10 minutes.
- In a separate bowl, combine all your dry ingredients for the crumble. Mix thoroughly.
- Add butter and using a pastry cutter or fork, smash it into the dough mixture. You will find mix becomes piece-y and gritty with chunks of butter.
- Remove the peaches from the refrigerator and add them to a baking dish. Bake for 10 minutes.
- After 10 minutes remove the peaches from the oven.
- Mix the hot water in with your topping ingredients. The dough this makes will be thick and have consistency similar to drop biscuits.
- Add dollops of the topping to the hot peaches. Cover the top with spoonfuls of it.
- Add back to the oven and bake for 35-40 minutes or until the Oatmeal topping is a warm brown.
- Remove from oven and serve immediately with a scoop of vanilla ice cream and an additional sprinkle of cinnamon.
