Smashed potatoes are such a delicious, simple side dish or appetizer. They’re wonderful finger food and I love the light crispiness they give you mixed with all the potato flavor. So I decided to make a fall/Halloween version of smashed potatoes with these Garlic Rosemary Purple Smashed Potatoes.
Celebrating the season
I made these for the first time last year when I was setting up a themed witchy party to celebrate Halloween with friends. You can see that whole set up {HERE}. It was such a fun dinner and I wanted to not only have the ambiance right, but I wanted the food to feel festive and fun too. I also didn’t want it to feel too over the top Halloween-like but more sophisticated. These Garlic Rosemary Purple Smashed Potatoes were a part of it as was this delicious Beet Soup {HERE}. I wanted there to be dishes and snacks you might eat at a harvest celebration and not just a Halloween celebration.
That said, these Garlic Rosemary Purple Smashed Potatoes would be lovely for an early spring celebration too.
Making Garlic Rosemary Purple Smashed Potatoes
Garlic Rosemary Purple Smashed potatoes are an easy recipe to make. They don’t have a lot of over complicated steps but they do take about 40 minutes to bake because you are essentially double baking the potatoes.
The first step in making purple smashed potatoes is to boil them like you would normal potatoes. They will be ready in 15- 20 minutes when you are able to easily pierce them with a fork.
While the potatoes boil, I make the Garlic Rosemary mix that goes on top of them for the next step.
Once the potatoes are done boiling, I drain them and then add them to a baking sheet. I smash them on the baking sheet with a potato smasher. You can also use a heat safe mug or a fork if they are soft enough.
Before adding them to the oven, I spoon the garlic rosemary mix over them. Once done, I’ll top with additional parsley, pine nuts and a drizzle of melted butter.
Finding Purple Potatoes
So, some stores sell purple fingerling potatoes in a bag together. (Possibly Whole Foods and Trader Joes.) However, I could not find just a bag of purple fingerling potatoes. I did find a multi-colored bag. So, I bought several of the multi colored bags and took the purple potatoes from those. Then I set the other potatoes aside so that I could use them in a recipe later in the week.
Tips for making crispy Garlic Rosemary Purple Smashed Potatoes
- Use a potato smasher or even a heat proof cup to smash the potatoes once they come out of the hot water.
- If you don’t feel like the potatoes are crispy enough, you can put them back in for a few minutes. No more than 5 and keep an eye on them. I find the purple potatoes sometimes need a few extra minutes for whatever reason.
- Make sure to use sea salt. I love using coarse sea salt for potato dishes and recommend it.
- I have the option of adding melted butter over these at the end, which makes them insanely good. I do not recommend making these ahead of time. They do taste better when they are fresh.
- If you have leftovers, you can save them in an air tight container for up to three days. Reheat them in the oven for about 5 minutes at 400 degrees.

Garlic Rosemary Purple Smashed Potatoes
Equipment
- large pot or Dutch oven
- Baking sheet
Ingredients
- 12 fingerling Purple Potatoes
- 1/3 cup extra virgin olive oil
- 4 Tbsp. minced garlic I like to use pre minced for this as it helps to flavor the olive oil
- 2 tsp crushed dried rosemary
- 2-3 Tbsp pine nuts
- 1/2 cup parsley, chopped
- 2 tsp. sea salt
- 1 tsp. black pepper
- Additional sea salt and pepper as needed
- Optional: 1/2 stick melted butter
Instructions
- Wash and scrub the potatoes to get any dirt off. I like to also run the water over them in a colander.
- Preheat oven to 450 degrees.
- Heat a stock pot with water and bring to a boil. Then add the potatoes and cook until they're soft enough to spear with a fork. This should take 15- 20 minutes.
- While the potatoes cook, mix together the extra virgin olive oil, garlic, rosemary, salt and pepper and parsley.
- Drain the potatoes and spread them out on a ton stick baking sheet. Smash them until they are somewhat flattened. I use a measuring cup to do this. You want them 1/3 inch thick or so.
- Spoon the olive oil mix over each individual potato.
- Bake for 20 minutes or until they edges are crunchy! Season to taste with additional salt and pepper.
- If you decided to add the butter, drizzle it over the potatoes right before serving. Serve with fresh parsley and top with the pine nuts.
