Preheat the oven to 450 degrees.
Wash and remove the stems from radishes. Quarter them and add them to a baking sheet.
Drizzle with the extra virgin olive oil and then use your hands to ensure all the radishes are lightly coated. Sprinkle on the sea salt and pepper.
Roast for 12 minutes.
Just before the radishes are done, add the butter to a non-stick sauté pan and brown it over medium heat. This will take three minutes and you want to continuously stir so it doesn't burn.
Add in the honey and lemon and whisk until well combined, then remove it from the heat. Add in the radishes as soon as they're done and coat.
Serve with fresh thyme or fresh rosemary and additional sea salt and pepper to taste.
