Add the copped chicken to a plastic bag or container that can be sealed and then add all the marinade ingredients. Cover or close the bag and refrigerate for at least 8 hours. You can go up to 24.
Preheat the oven to 400 degree.
Add the chicken and the vegetables to the skewers in an alternate fashion.
Add them to a baking sheet lined with parchment paper.
Brush the onions and Brussel sprouts with a little olive oil and then sprinkle a little more salt and pepper over them. Squeeze the lemon half over everything.
Bake for 15 minutes on one side and then flip them.
Bake for another 15 minutes.
Serve immediately with the sauces, additional vegetables or a side of rice, potatoes or homemade fries.
