Ingredients

Italian Roasted Cauliflower Ingredients

  • 2 heads of cauliflower
  • 2 Tbsp. pureed garlic or finely minced garlic
  • 2 tsp. dried oregano
  • 1 tsp. dried rosemary
  • 1 tsp. dried parsley I like curly parsley as opposed to the flat leaf Italian kind but either will work.
  • 1 tsp. Kosher salt
  • 1/2 tsp. fresh, ground black pepper
  • 1/2 tsp. dried basil
  • 1/4 tsp. paprika
  • 1/2 cup Parmesan cheese
  • 1/2 cup olive oil
  • 2 Tbsp. olive oil
  • Spray olive oil
  • Optional: Fresh parsley, extra Parmesan cheese and additional salt and pepper to top.

Instructions

Italian Roasted Cauliflower Instructions

  • Preheat the oven to 425 degrees.
  • Slice the cauliflower into 1 inch steaks starting from the middle.
  • Spay baking sheet with the spray olive oil and lay your steaks on it.
  • Use the 2 Tbsp. of olive oil and brush each side of the cauliflower steaks.
  • Mix together the 1/2 cup of olive oil, all the herbs and spices and the 1/2 cup of Parmesan cheese. Mix well.
  • Using a spoon, spoon a little bit of the mix onto each cauliflower steak.
  • Then using a basting brush, brush the mixture all over each piece of cauliflower.
  • Repeat those two steps on the other side of the cauliflower.
  • Bake for 15 minutes and then remove and flip over.
  • Bake another 15 minutes.
  • Garnish with fresh parsley, additional Parmesan cheese, and additional salt and pepper as desired.
