Caramelized Onion & Rosemary Ricotta Dip

Ingredients

  • 2 cups ricotta cheese
  • 1/2 of a large onion, sliced
  • 4 Tbsp. of olive oil, divided
  • 2 Tbsp. of butter
  • 1.5 Tbsp. dried rosemary, crushed
  • 1 Tbsp. garlic, diced
  • 1.5 tsp. Kosher salt
  • 1/2 cup Parmesan cheese
  • Chopped parsley to top
  • Bread for dipping, crackers or chips
  • Additional salt and pepper as desired

Instructions

  • Preheat your oven to 350
  • In a medium sized pan, add 2 Tbsp. of olive oil and heat through. 
  • Then add your onions and stir continuously until they start to soften. 
  • Add the butter to the pan and continue to stir constantly to caramelize the onions and ensure the butter doesn't burn. 
  • Once done, set aside. 
  • Add the ricotta cheese to a large bowl.  
  • Then add in the onions, garlic, rosemary and kosher salt. 
  • Blend together with a hand mixer or fold everything in together with a spatula. 
  • Pour everything into an oven safe dish, add any additional salt and pepper at this time. 
  • Top with the Parmesan cheese and then bake for 20-30 minutes until the cheese has melted and the Ricotta Dip is warm. 
  • Top with parsley and then stir. 
  • Add in the last two Tbsp. of olive oil and then add additional parsley as desired. 
  • Serve with bread, garlic bread, crackers or chips immediately.
