Ingredients

Salad Ingredients

  • 4 cups romaine, chopped
  • 2 cups arugula, chopped and packed
  • 1 cup mozzarella cheese, cut in squares
  • 1 cup chickpeas or Ditalini
  • 1 cup artichoke hearts, sliced
  • 1 cup roasted red peppers, drained and rinsed
  • 1/2 cup red onion, diced
  • 1 cup cherry tomatoes, sliced
  • 2/3 cup Kalamata olives, sliced
  • 1/2 cup chopped banana peppers
  • 1/4 cup fresh basil, chopped

Homemade Italian Dressing Ingredients

  • 3/4 cup extra virgin olive oil
  • 1/4 cup red wime vinaigrette
  • 3/4 cup finely shredded parmesan cheese
  • 1 1/2 tsp. dried basil
  • 1 1/2 tsp. dried parsley
  • 1 1/2 tsp. garlic powder
  • 1 1/2 tsp. onion powder
  • 3/4 tsp. table salt
  • 1/2 tsp. sugar
  • 1/2 tsp. dried oregano
  • 1/4 tsp. black pepper
  • 1/4 tsp. paprika
  • 1/4 tsp. garlic salt

Instructions

  • Mix all the ingredients together for the dressing and set aside. If you make this ahead of time you can refrigerate it in an air tight container for up to a week.
  • Cut and mix all the salad ingredients together. Top with the dressing only when ready to serve or in individual bowls.
  • Additional sea salt and fresh cracked black pepper to taste.
