Kielbasa Skewers with Creamy Dijon Dipping Sauce

Ingredients

Ingredients for the seasoning spices

  • 3 tsp. dried oregano
  • 1/2 tsp. dried parsley
  • 1/2 tsp. garlic powder
  • 1 tsp. paprika
  • Sea salt and pepper to taste I twist my salt grinder 4 times and the pepper grinder 3.

Ingredients for the Dijon dipping sauce

  • 1/2 cup Dijon mustard
  • 1 1/2 Tbsp. lemon juice
  • 4 Tbsp. mayonnaise
  • 1 Tbsp. honey

Ingredients for the skewers1/3 cup extra virgin olive oilSalt and pepper to tasteChopped parsley for serving

  • 4 smoked kielbasa sausages, sliced about 1 inch thick
  • 1 1/2 yellow pepper, sliced
  • 1 1/2 red pepper, sliced
  • 3 small zucchini, sliced You can also use one large zucchini but then you might have to slice it in half again.
  • 1 red onion, chopped into chunks
  • 2 cups baby potatoes or Dutch potatoes in 1/2 - 1 inch pieces
  • 1/3 cup extra virgin olive oil
  • Salt and pepper to taste
  • Fresh parsley for serving

Instructions

  • Preheat the grill to 400-450 degrees.
  • Mix together all the ingredients for the spice mix and set aside.
  • Mix together all the ingredients for the Dijon mustard sauce and set aside. Refrigerate in an airtight container if it is going to be more than 30 minutes before eating.
  • Add the Kielbasa to the skewers along with the vegetables in an alternating pattern.
  • Grill on each side for 5 minutes.
  • Serve immediately with the Dijon Mustard Dipping Sauce
