Preheat the grill to 400-450 degrees.
Mix together all the ingredients for the spice mix and set aside.
Mix together all the ingredients for the Dijon mustard sauce and set aside. Refrigerate in an airtight container if it is going to be more than 30 minutes before eating.
Add the Kielbasa to the skewers along with the vegetables in an alternating pattern.
Grill on each side for 5 minutes.
Serve immediately with the Dijon Mustard Dipping Sauce
