These Vanilla Raspberry Champagne Floats are the perfect way to celebrate any occasion. They’re easy to make and a delicious way to rejoice for any milestone – even the small ones!
A few weeks ago, on the last day of school, I decided it was a good time to celebrate making it through the year. Celebrations, in my opinion, should include champagne. Whether it’s New Year’s, Valentine’s, Christmas or just brunch with friends, a little bubbly is a good way to cheers to the day.
And even if it’s something as simple as the last day of school, a celebration is a celebration. So, I decided to make some Vanilla Raspberry Champagne Floats to kick off the summer. I made a version of this for me – an adult version – and a version for the kids that includes sparkling grape juice. I mean, they made it through the school year too, right?
Making the Champagne Floats
A float is always an extra fun drink and I wanted to make these something to remember. I have a love of vanilla flavored drinks, but since it is (was) berry season, I also wanted to be able to include a beautiful fruity flavor too.
I decided to use Raspberries because I found a sorbet that I loved and wanted to continue with the delicious flavor. I also love the way raspberry pairs with vanilla. (My favorite coffee in the winter from Starbucks is a Raspberry Vanilla Latte..YUM!)
In making these Vanilla Raspberry Champagne Floats, I didn’t want to just add the ice cream and sorbet either. I really wanted the champagne to take on the flavors so I decided to use both a vanilla simple syrup and a raspberry simple syrup.
I was able to buy a vanilla simple syrup at the grocery store and used that {HERE} for the Vanilla Raspberry Champagne Floats. I wanted to keep these as simple as possible and when I saw that, I grabbed it. However, I couldn’t find a raspberry simple syrup in the grocery store and decided to make some instead.

Making the simple syrup
For the raspberry simple syrup in these Vanilla Raspberry Champagne Floats, I simply combined 2 cups of raspberries, three cups of sugar and ¾ cup of water. I brought this to a low simmer for about 10 minutes. Then I let it cool and strained it through a funnel {HERE} as I added it to a mason jar.
If you want to make a vanilla simple syrup, use the same ratios for water and sugar and then two teaspoons of vanilla extract.
The ice cream will make this!
I’m an ice cream girl. It’s my weakness and having great ice cream in this drink was really important to me.
When it came to the ice cream for the Vanilla Raspberry Champagne Floats, I used a Vanilla Bean Ice Cream for a stronger vanilla flavor. I then used a Raspberry Sorbet instead of ice cream for the float. I added a couple small scoops of each to glass. Depending on what flavor you want more of, you can add more or less.
Tips for making Vanilla Raspberry Champagne Floats
- To make this recipe a “virgin” and safe for kids, substitute the champagne for sparkling grape juice. Everything else can stay the same.
- The Vanilla Raspberry Champagne Floats are perfect for any celebration and you can easily make them by the glass. It’s easier to measure you the simple syrup by each glass.
- Keep the champagne chilled until someone wants one.
- Keep the ice cream chilled too. You can scoop it out ahead of time and then stick it back in the freezer.
- Have a little mint on hand for a garnish!

- 8 oz Champagne (Use sparking grape juice for the kids' version.)
- 2 Tbsp. Raspberry Simple Syrup
- 1 Tbsp. Vanilla Simple Syrup
- 1-2 small scoops of Vanilla Bean Ice Cream
- 2-3 small scoops of Raspberry Sorbet
- Mint and raspberries as a garnish
Raspberry Simple Syrup Ingredients
- 2 cups Raspberries
- 3 cups sugar
- 1/2-1 cup water
Instructions
Instructions for the Raspberry Simple Syrup
- Combine the raspberries, sugar and water on the stove over a low flame.
- Simmer the mixture for 10 minutes and then let it cool.
- Strain out the raspberries and add the mixture to a mason jar. Let it chill for 2 hours.
Instructions for making the Champagne Floats
- Add ice cream and sorbet to the glass
- Add in the vanilla and raspberry simple syrup.
- Pour the champagne or sparkling grape juice over the top.
- Garnish with mint and a raspberry. Drink with a straw.
