My Turkey and Bacon Sandwich with Basil Mayo is an easy and delicious dinner or lunch for the that uses tender turkey, salty bacon, mozzarella and a fresh flavored basil mayo to make a memorable meal. Make this turkey sandwich with leftover turkey or pile on deli turkey if you want to make this epic throughout the year.
We have been finishing off the last of our holiday turkey and I wanted to make sure we used it all in a way that really allowed us to enjoy the thick cuts of meat. I also have some bacon lovers in my family. A Toasted Turkey and Bacon Sandwich sounded like a delicious way to go but I wanted to make the sandwich a little extra special so I added on some melty mozzarella cheese and an incredible Basil Mayo that I whipped together while the sandwich was toasting in the oven. You could also make this sandwich with deli turkey so if you do not have turkey leftovers and want an easy and delicious lunch, this will work for you too. I’ll tell you how below.

The turkey you can use
First, if you do have leftover turkey, I recommend using that. The toasted turkey and bacon sandwich becomes much more hearty always has a bit of extra flavor from however you flavored your turkey. However, you can use your favorite deli turkey if you prefer. You just want to make sure you use enough slices per sandwich to give it a little bulk. I have a recommendation in the recipe below.

The best bread
Similarly to the turkey, I suggest using small baguettes like I did or something like my ciabatta bread {HERE}. This bread holds up much better in the oven when you are making the Toasted Turkey and Bacon Sandwich than the other types of bread. That said, you can use a regular loaf bread if you want. I would toast it in the toaster prior to adding the turkey and mozzarella and melting that per the recipe instructions.
Make your own mini baguette
If you want to make your own mini baguettes you can use my no need recipe for no knead dough {HERE}. If make these mini you will need a mini loaf pan. I have this one {HERE}. The recipe should make 4-5 mini baguettes. Let them rise one final time in the loaf pan and then reduce the cooking time to 25-30 minutes at 450 degrees. However, instead of cooking the full time you need for the full loaf, reduce the time to 25-30 minutes at 450 degrees F. Keep the lid on throughout the process.

The basil mayonnaise
I wanted this sandwich to be a little more than just a turkey and bacon sandwich so I decided to make a basil mayonnaise sandwich. you you are making the turkey sandwich with leftovers then you will find this is really a lovely addition to a sandwich that might have some thicker pieces of turkey and help to keep the whole sandwich nice and moist. The flavor also pairs perfectly with the bacon.
Additional toppings
I have of course included the bacon in this turkey and bacon sandwich, but I also added on some fresh slices of mozzarella, which is a nice alternative to a cheddar and something that makes it a lot more cheesy. I also added on a tomato because it felt like it belonged. Feel free to add on lettuce if you like too or swap out the cheese for cheddar, gouda or even havarti.

Turkey & Bacon Sandwich with Basil Mayo
Equipment
- Small food processor
- Broiler/sheet pan
Ingredients
- 2 small baguettes or ciabatta rolls, sliced in half
- 2 tbsp extra virgin olive oil
- 2 cups of leftover turkey (1 cup per sandwich) or 8 slices of deli turkey Use 4 slices of deli turkey per sandwich. You can add more if you want to make the sandwich thicker.
- 4-6 slices of mozzarella - 2 or 3 per sandwich
- 4 slices of tomato - 2 per sandwich
- 4-6 sliced bacon, cooked - 2-3 per sandwich
Ingredients for the Basil Mayo
- 1 cup of mayonnaise
- 10 oz fresh basil
- 1/4 cup extra virgin olive oil
- 3 tbsp red wine vinegar or lemon juice
- 1 large clove of fresh garlic
- 1/4 tsp coarse sea salt
- Additional salt and pepper to taste
Instructions
- Turn the oven to broil. Then brush each half of the sliced side of the bread with the extra virgin olive oil and place it in the broiler for 3 minutes.
- Meanwhile, combine the mayonnaise, basil, lemon juice or vinegar, extra virgin olive oil, fresh garlic and salt in the food processor and blend. Set aside until it is needed.
- When the bread is done remove it from the oven and top the bottom half of the bread with the turkey and the mozzarella. Then place it in the broiler for another 2-3 minutes or until the mozzarella is melty. Keep an eye on your bread to make sure it does not burn. Leave the tops of the bread out.
- When the mozzarella looks melty, remove the bread and turkey from the oven. Top with the bacon, tomatoes and then spread a thick layer or the basil mayonnaise onto the top of the bread. Serve and enjoy!
