Since I started growing my sourdough starter, I’ve had a lot of heart burn about throwing away the sourdough starter discard. While I love having the sourdough starter available for bread and pizza dough and other fun things, throwing away the discard just feels really wasteful. So I started researching and now instead of throwing it away, I’m making sourdough crackers from starter several times a week. And they’re delicious!
Making sourdough crackers easy
I’ve been working on this recipe for Butter Parmesan Sourdough Crackers after a bit of researching a few different methods. I didn’t want to feel like it was a huge chore. I make these a lot and don’t have a lot of extra time with the kids at home and the farm.
Also, I didn’t want to add more flour since I already feel like I’m going through so much of it. I use organic bread flour for my starter so when I have to pay $8 per bag of flour, each bit of it is precious.
You also don’t need to roll these out or need any fancy tools to make my Butter Parmesan Sourdough Crackers like you may have seen on other sourdough cracker recipes. I don’t have a pasta attachment for my mixer and if I did, I don’t think I would want to dirty it every day. The only things you do need for these sourdough crackers are a mixing bowl, a cookie sheet, a spatula and parchment paper.
When can I make sourdough crackers from starter?
This recipe will work with sourdough started starting around Day 5. You want to make sure it is at 100 percent hydration – meaning your starter has been fed with equal parts flour and water. You can read my Sourdough Starter Tips from a Newbie {HERE}.
I’ve made theses Butter Parmesan Sourdough Crackers and another version of them that I’m working on every other day or sometimes every day since Day 5. They’re so simple and they really make the perfect snack.
How long do they keep?
You can keep your Butter Parmesan Sourdough Crackers for about 4 days as long as you store them in an airtight container. I’ve found it’s best to keep them something like this and keep them in a cool, darker place like the pantry.
The Butter Parmesan Sourdough Crackers really make a wonderful snack, but I also think they’d be great for small gatherings too. Just place a bowl of them on the table and see how quickly they disappear. Kevin and I tend to munch on them throughout the day and they always seem to get eaten no matter how often I make them.

Butter Parmesan Sourdough Crackers
Equipment
- Cookie sheet
- Mixing bowl
- Parchment paper
- Spatula
- Pan for melting butter or microwave and microwave safe dish
Ingredients
- 1.5 cups sourdough starter discard
- 1 cup shredded Parmesan cheese
- 1/3 cup butter, melted and cooled
- 1 tsp. table salt
- .5 - 1 tsp. coarse sea salt
Instructions
- Preheat your oven to 325
- Remove 1.5 cups of sourdough discard from your sourdough starter and add to a separate bowl.
- Melt butter and then let it cool for about 10- 15 minutes before adding it to the sourdough starter. You want to make sure it hasn't re-hardened but if it's too warm, your crackers will turn out like crisps (which are delicious in soups and salads) instead of crackers.
- Once the butter is added add the table salt, parmesan and mix everything thoroughly. You want to make sure the butter is totally combined with the starter dough. You shouldn't be able to see any hint on it on the surface or on the sides.
- Add parchment paper to a cookie sheet and then pour your mixture onto it. Use a spatula and spread out the cracker mixture. You want the dough about 1/8 of an inch thick.
- Add them to the oven for 30 minutes.
- After 30 minutes remove them from the oven. Cut the cracker shapes with a pizza cutter or a pasta cutter. Or, you leave them whole and just break them later.
- Add your sea salt by sprinkling it over the crackers.
- Put them back int he oven for another 30 minutes.
- Remove and let cool. Keep in an airtight container to keep them fresh.

They are called sourdough butter Parmesan crackers. But where’s the Parmesan in the recipe? The only place it seems to be is in the name.

I just had to put them in the oven a little longer. But my oven is extremely unreliable. They turned out great. I’m happy to have found something simple to do with my discard.

Are they cooked for a total of one hour or is the second 30 minutes on recipe a mistake?

Hi Terri, Sorry! I was moving too fast as I wrote this recipe. It is a total of 1 hour. 30 minutes before you cut them and then 30 minutes after.

That’s a great question. I think if you made them with regular dough there might be more of a full recipe process involved since the dough would more than likely need yeast.
