What is French Mustard Chicken
Generally, French Mustard Chicken is a braised chicken dish made with chicken thighs and French mustard. At its most basic level it is chicken in a sophisticated mustard sauce.

What is in my recipe?
For my Slow Cooker Creamy French Mustard Chicken recipe, I tried to keep it pretty similar to what you might find in the original dish. I use white wine, butter, shallots, garlic, French Dijon mustard, heavy cream, fresh thyme, bay leaves and of course chicken. However, I did decide to add in the capers after tasting my sauce. I love the extra brininess they bring to this smooth, buttery sauce. I also knew we were going to be eating this with mashed potatoes and love a good sauce with capers and mashed potatoes.
Searing the chicken
To make this recipe the best it can be, the chicken should be seared prior to cooking in the slow cooker. You can do this in a slow cooker if it has a sauté function. Mine that I just bought {HERE} does have it and that is why I bought it. If your’s does not have that setting, you can easily cook that portion of the recipe in a sautéd pan on the stove. I have notes in the recipe for you.
Searing the chicken helps to do a few things. 1. It helps to keep the moisture in the chicken. 2. It adds a nice sear flavor to the chicken. 3. It gives you brown bits from the sear on the pan – from the chicken itself and the seasoning – that helps to add flavor to the sauce.

Tips for making Slow Cooker Creamy French Mustard Chicken
- Make sure to tenderize your chicken. They will help to keep moisture in and help all the pieces of chicken to cook evenly.
- If you do not have a sauté setting on your slow cooker, make sure to note the places in the recipe where you will need to use a sauté pan before getting everything going in the slow cooker.
- I have the cooking time for the Slow Cooker Creamy French Mustard Chicken set to 6 hours on low. However, you can also bump this to 8 hours if you need that time or reduce it to 4. But if you reduce it to 4, you will need to cook it on high for about an hour and then reduce it to low for the last few hours.
- To save leftovers, place them in an air tight container int he refrigerator for up to four days.
- To reheat any leftovers, you can use the microwave or you can place them in a bakeware pan and bake it in the oven at 350 degrees for about 10 minutes. If the chicken still feels chilled, give it another 5 minutes.

Slow Cooker Creamy French Mustard Chicken with Capers
Equipment
- Slow cooker Ideally a slow cooker with a sauté feature. If it does not have that then you will need a separate pan.
Ingredients
Ingredients for the chicken
- 5 chicken breasts, tenderized
- 1 tbsp garlic salt
- 1/2 tbsp onion powder
- 1/2 tbsp dried parsley
- 1 tsp dried sage leaves, packed
- 1 tsp dried thyme
Ingredients for the slow cooker Creamy French Mustard Chicken with capers
- 2 tbsp extra virgin olive oil
- 1 large shallot, diced
- 3 large cloves of garlic, sliced
- 2 tbsp butter
- 1 cup white wine
- 1 pint heavy cream
- 1/4 cup Dijon mustard
- 2 tbsp capers
- 3 bay leaves
- 4 sprigs fresh thyme
- 2 sprigs tarragon
- 1/2 tsp coarse sea salt
- 1/4 tsp fresh cracked pepper
- Optional for serving: Fresh grated Gruyere or Parmesan cheese, additional fresh thyme and additional sea salt and fresh cracked pepper to taste
Instructions
- Pat the chicken dry and then mix the dried herbs together. Season both sides of the chicken with the herb mix.
- If you have a slow cooker with the sauté function, set the pot to sauté and add the extra virgin olive oil. When it is warm, cook the chicken on both sides for 2 minutes and then remove it and set aside. Do this in batches if you need to so you do not crowd the chicken right now. ***If you do not have a slow cooker with a sauté function, do this part in a large sauté pan on the stove.
- Once the chicken has been seared, add in the shallots to the slow cooker on sauté or sauté pan. Cook for three minutes stirring regularly until they become soft and translucent. The add the garlic and cook for another two minutes. ***If you are doing this over the stove, use a low heat flame.
- Add in the butter and allow everything to cook down for another 3 minutes, stirring regularly. Once it is melted, pour in the white wine and deglaze the pan, scrapping any of the brown bits. Pour in the heavy cream and then whisk in the mustard. ***If you are making this portion in a sauté pan on the stove, add it to the slow cooker now.
- Place the chicken back into the sauce then add in the capers, thyme and salt and pepper. Cover and cook the chicken on low for 6 hours.
- When done, serve the Slow Cooker Creamy French Mustard Chicken with capers with mashed potatoes, rice or pasta. Top with cheese, additional fresh thyme leaves and sea salt and pepper to taste.
