As spring approaches I’m craving lighter meals that are easier to make. With all the work on the farm in the spring, I just can’t afford to spend as much time in the kitchen as I can during the fall and winter. This Roasted Peppers and Burrata Salad is one of those meals that fits the bill. It’s perfect as we head into spring and it’s something you can make all summer long as a lighter meal option.
Upping the lunch game
I made this for Kevin and I for lunch one day last week. Since he and I both work from home, sometimes lunch is out best meal of the day. It’s when I have the best light in my house for photos and I’m often the hungriest around 1 p.m. Making a delicious meal like this Roasted Peppers and Burrata Salad recipe is an easy way to have a delicious meal that’s packed with flavor.
And I will tell you, when I can get a meal with so much flavor in it, it often leaves me feeling more satisfied than something like a random sandwich I throw together. I truly believe that all the food we eat should satisfy our taste buds because, in doing so, it will help to better satisfy our bellies.
Mediterranean cooking
One of my goals this year as a recipe developer has been to create more Italian and Mediterranean dishes. As someone who is mostly Italian, I feel like I often have to stay away from Italian foods because carbs don’t do great things for my body. But I love that this recipe works in so many kinds of Italian flavors without being carb heavy. I love my pasta, but I can’t eat it every day or even multiple times a week. Working the flavors throughout other dishes like this one and my Italian Roasted Cauliflower Steaks {HERE}, really helps me to feel like I can still make and eat the foods I love without all the carbs that love my body.
Making Roasted Peppers and Burrata Salad
To make the Roasted Peppers and Burrata Salad you need a few simple ingredients; red, orange and yellow peppers, burrata, thyme, some crusty Italian bread and a few simple things to make the delicious honey dressing. Oh also, plenty of salt and pepper. Don’t skimp on those two seasonings – ever.
I made this via roasting the peppers in the oven, but as spring turns to summer this would be a great meal to grill as well! In fact, it might be even better when the peppers and the bread are slightly charred from the grill.
Can serve a crowd too
As we go into a season of outdoor entertaining, this dish would also make a wonderful appetizer for guests too. Since it’s served with bread, you could easily make this a passable appetizer at a party on the patio. You can easily make the dressing ahead of time and then just plate it once it’s time to feed the guests.
Additionally, you could use this as a side with a great grilled chicken or steak or even pasta.

Roasted Peppers and Burrata Salad
Ingredients
- 3-4 red, yellow or orange sweet peppers
- 8 oz. burrata This is about one container.
- 6 Tbsp. olive oil, divided
- 3 Tbsp. honey
- 2 Tbsp. apple cider vinegar
- 2 cloves of minced garlic
- Salt and pepper to taste (Don't skimp!)
- Crusty bread
- Fresh thyme
Instructions
- Preheat oven to 425 degrees
- Slice your peppers and brush each side with olive oil on a cookie sheet. Season them with generous amounts of salt and pepper on both sides too.
- Bake them for 25-30 minutes. Flip them over once in between to ensure charing on both sides.
- While the peppers cook, combine 3 Tbsp. of olive oil, the honey, apple cider vinegar and garlic in a bowl. Whisk to emulsify. Season with salt and pepper to taste.
- Broil slices of bread with olive oil for two minutes. Make sure to watch these carefully!
- When the peppers are done, plate them immediately and add the burrata to the top. Drizzle on the dressing, add your thyme and season with salt and pepper to taste.
- Serve with the crusty bread and enjoy!
