- Use the highest quality extra virgin olive oil you can find. When roasting this is especially important! It’s responsible for that yummy caramelization that I so love.
- Use fresh grated parmesan cheese. I recommend grating this yourself from your favorite brand but if you want you can use pre-grated from a higher quality brand.
- The same rule applies to mozzarella cheese. Grate it yourself if you can, but if not use a higher quality cheese thats pre-shredded.

Roasted Green Beans with Parmesan and Mozzarella
Equipment
- Baking sheet
- Mixing bowls
Ingredients
- 1 pound green beans with the ends trimmed
- 1/4 cup extra virgin olive oil
- 3 Tbsp. fresh grated parmesan
- 1 1/2 Tbsp. minced or grated garlic (About 3 cloves)
- 1 tsp. sea salt
- 1/4 tsp. fresh cracked black pepper
- 1 1/3 cups Mozzarella cheese
- 2 Tbsp. fresh parsley, chopped
Instructions
- Preheat the oven to 425 degrees.
- Mix together olive oil, parmesan, garlic, salt and pepper in a bowl.
- Brush the mix over the tops of the green beans
- Bake for 15 minutes and then remove from the oven and add the mozzarella cheese to the top.
- Bake for another 3-5 minutes or until the mozzarella is melted, bubbly and golden.
- Top with parsley, additional salt and pepper as desired and serve!
