I love simple snacks that are good for me too. Nuts, cheeses, fruits and veggies -they’re usually my easy go-tos. However, these simple Roasted Chickpeas in the oven are almost as east to make as it is to slice up some fruit and veggies. And they’re perfect for a crunchy snack when you want to eat something a little better for you than potato chips.
What is a Chickpea?
If you’re not familiar with Chickpeas, they’re a part of the plant family Fabaceae and a legume like other peas and beans. The Chickpeas we eat are actually the seeds of the plant, and if you’re not familiar with them by the name Chickpeas, maybe you’ve heard of Garbanzo Beans? They’re the same thing!
Chickpeas have a variety of health benefits including being a rich source of vitamins and minerals. They may also include other health benefits such as improving digestions and they’re high in fiber. Chickpeas are also a high source of protein, which makes them a good meat replacement for vegan and vegetarian dishes.
How can you cook chickpeas?
Chickpeas can be cooking in a variety of ways including baking them, roasting them, sautéing them and even frying them. For the purposes of my Roasted Chickpeas in the oven , we are going to focus on roasting.
Roasting Chickpeas on high heat allows them to crisp up and harden. This makes them the perfect crunchy snack for people searching for an alternative to chips and pretzels. And mixing them with a few spices and a little olive oil really helps to add some flavor.
How can I eat Roasted Chickpeas?
Besides snacking on them like chips, you can use Roasted Chickpeas in a variety of ways. They’re great for topping off salads, cream based soups or dips like my Creamy Whipped Feta Dip {HERE}. They’re very mild in flavor depending on the spices you use with them and really could just work in a lot of different ways.
Tips for making my Roasted Chickpeas in the oven
- When making Roasted Chickpeas in the oven, you want to make sure the heat is really high. I recommend preheating the oven to 425 degrees. Some recipes may tell you to use 350 but just like with any other roasted veggie, the high temperature is key to getting the crispiness.
- Also, make sure to drain all the aquafaba out of the chickpeas well and then let them continue to dry on the towel. Moisture is not conducive to crispy chickpeas.
- Use high quality extra virgin olive oil for these as it is the base of flavor.
- Play with the spices. Because the flavor of the Chickpea is so mild, I encourage you to play with the flavors of Roasted Chickpeas in the oven. Try it with my seasonings first for a nice base recipe and then add the ones you love the most to kick it up a notch.
- Make sure to let these sit for a little bit to get the most crunch. Can you start eating them right away? Yes, but they will get crunchier over time.
- Storage: Once completely cooled, lightly cover these and leave them on the counter for up to two days. This will make a small nut bowl-sized portion so you won’t have canisters of them to store.

Equipment
- 1 baking sheet lined with foil paper
Ingredients
- 2 cans Chickpeas or garbanzo beans (They're the same thing)
- 1-2 Tbsp extra virgin olive oil
- 1 tsp. garlic salt
- 1/2 tsp onion powder
- 1 tsp. paprika
- 2 tsp. sea salt
- 1/2 tsp fresh cracked pepper
Instructions
- Preheat the oven to 425 degrees.
- Open and drain the cans for the Chickpeas completely. Lay them out on a paper towel for 10 minutes to help reduce extra moisture.
- Add the chickpeas to a baking sheet with the olive oil and spices. Mix by lightly sharing the sheet or using your hands.
- Add them to the oven for 20 minutes. Check on their doneness then and give them 5-10 more minutes. More than likely they will need closer to 30 minutes to be done but just check. You can even do a taste test of the crunch if you like.
- Once done, you can eat them right away or let them cool and store them. They will get crunchier over time.
