This Kiwi Lime Mojito recipe with simple syrup is the one drink recipe you need to end summer with. It’s fruity, fresh and full of sweet notes that will cool you off on a hot summer night when you’re relaxing on the patio.
The first Fun Drink Friday
This is actually the first drink in new series I’m announcing called Fun Drink Friday. I’m excited about this series because I think it will push me to be creative in a space and play with flavors in a new way.
I will tell you in advance, I’m actually not a big drinker. But I’m a lover of a good wine and a delicious cocktail on the weekends. However, that doesn’t mean that these drinks will all be alcoholic cocktails. At least two per month will contain alcohol, but I would say one to two per month will be non-alcoholic. And, I will tell you how to remove the alcohol in each post.
But, this Kiwi Lime Mojito recipe with simple syrup felt like the perfect way to kick it all off.
Making a simple syrup
For the Kiwi Lime Mojito recipe with simple syrup, you do have to make a simple syrup. If you’ve never made one before its – like its name suggests – simple. In fact, once you make one flavor of simple syrup, you usually can make ALL the flavors of simple syrup.
The Kiwi Lime Mojito recipe requires a mint simple syrup and you can make it in about 10 minutes.
To make it you simply combine mint leaves, water and sugar. Bring all that to a simmer and light boil. Then let it cool and store it in the refrigerator.
Because this is a mint simple syrup and mint is antimicrobial, you can actually make this mint simple syrup about up to 3 weeks in advance and keep it in the refrigerator. In fact, this would be a beautiful way to flavor other things too like lemonade or ice tea.
Mixing it up with kiwi fruit
Kiwi is always such a fun fruit to use in recipes. It’s a bit underrated in my opinion and has a beautiful sweetness to it as long as you eat it when it’s ripe.
It’s a fruit that’s native to China and Taiwan but a lot of the kiwi that’s consumed in the United States is grown in California. It’s also now commonly grown in New Zealand. Unfortunately, I can’t add a kiwi plant to the garden because it grows best in garden Zones 7 through 9. However, if you live in those zones maybe give it a try! Wouldn’t it be lovely to have fresh kiwi in the backyard?
Tips for making the Kiwi Lime Mojito recipe with simple syrup
- Again, you can make this simple syrup up to 3 weeks in advance and keep it in the refrigerator in an airtight container or mason jar.
- This recipe will tell you how to make the Kiwi Lime Mojios with simple syrup per glass. To make more – like a pitcher – all you need to do is use the same measurements and increase them. I would suggest then tripling the simple syrup recipe so that you have enough of it. This is a sweet drink and if you don’t use enough of the syrup, it might taste a bit dull. (That’s why I like to make it per glass.)
- To make this non-alcoholic, use just a bit more club soda. Or you can sub the club soda and rum for a lemon lime carbonated water.

Kiwi Lime Mojito recipe with simple syrup
Equipment
- Food processor
- Muddler
- Pot
- Ball canning jars or other airtight container
Ingredients
Kiwi Lime Mojito
- 5-6 ripe kiwi, no skin on and blended + an extra or two for garnish
- 1 bottle White rum I used Bacardi.
- 1-2 bunches fresh mint leafs
- 3 limes You will need 1 Tbsp. of lime juice per glass. Depending on your limes, you might need several so buy enough to make your servings work. Plus, you garnish with a lime.
- Mint simple syrup
- Club Soda
- Ice
Mint Simple Syrup
- 6 sprigs of mint
- 1 cup of water
- 1 cup of sugar
Instructions
Mint Syrup Instructions
- Combine mint, water and sugar in a pan on low heat
- Allow to come to a boil and then turn down the heat to a simmer for 5-10 minutes.
- Allow to cool completely and then save in an airtight jar in the refrigerator. Let cool in the refrigerator 1-2 hours.
Kiwi Lime Mojito recipe with simple syrup
- Blend the kiwi in a food processor until it is the consistency of apple sauce. .
- Add 8-10 mint leaves to a glass.
- Add in 3-4 Tbsp. of mint simple syrup per glass. I like 4 because I like sweet drinks.
- Add in 1 Tbsp. of lime juice per glass.
- Muddle together to break the mint leaves open.
- Add in 3 Tbsp. blended kiwi
- Add in 1 Tbsp. of rum.
- Add a slice of lime to the glass
- Add ice to the glass
- Top off with club soda
- Top with chunks of kiwi and a fresh sprig of mint.
It is happy hour here and that mojito sounds like the way to enjoy it. It looks so cool and refreshing and the way to begin a weekend.
