The first time I ever enjoyed lettuce wraps was about 15 years ago in a PF Chang’s restaurant. I honestly cannot believe I had not eaten them anywhere earlier because I try to eat lower carb during the week. I am not strict about this and I do not adhere to any specific diet. Or at least I don’t now. Back then I was probably a little more strict. I think the lettuce wraps at PF Chang’s are chicken (we do not have one of these close to the farm now), but I decided to make a version of these delicious, easy wraps at home for dinner one night with ground pork. My Ground Pork Lettuce Wraps can be made in about 25 minutes and are one of my favorite weeknight meals for a fast and flavorful dinner.
What is in my ground pork lettuce wraps
My recipe for the ground pork lettuce wraps includes ground pork, onions, garlic, fresh ginger, red pepper and a sauce that includes soy, hoisin, rice wine vinegar, sesame oil and Sriracha. This is all cooked together in about 15 minutes and I love that it is a really delicious meal that can be made fast.

Why I love this recipe
I tend to love any cultural inspired food that has a lot of flavor. So any Asian inspired flavors really hits everything on my palette nicely and makes me feel satisfied. The combination of the flavorful pork in this recipe with the sauce really pairs well together too. The sauce enhances the pork’s richness while creating that umami flavor so often found in Asian cooking. Also, for us the ground pork lettuce wraps are perfect for the busy season with the kids’ practices and schools. They are also a nice, lighter dinner after a heavy season of food (the holidays, birthday celebrations) or in the middle of summer when I don’t want to cook.

The lettuce to use
The best lettuce to use for the ground pork lettuce wraps recipe is anything with firm leaves. I like Bib (shown) or Butter lettuce best best for flavor. These leaves are softer though so make sure not to overstuff the leaves to prevent them from tearing. You can also double up the leaves. Romaine and Iceberg lettuce will also work and provide more of a crunch but less flavor. The thing to remember is that no matter which lettuce you use, make sure it is nicely patted dry. Excess moisture on the lettuce will make the wraps soggy.

Can I eat this in other ways?
If lettuce wraps are not your thing, you can use the same recipe below to make ground pork rice bowls. You can also add everything to a bun and have a kind of Asian-inspired sloppy joe.
Saving the leftovers
To save the leftovers from the ground pork lettuce wraps, place the ground pork in an airtight container in the refrigerator. This will keep for about 4-5 days. Reheat it in the microwave with about 1 tablespoon of water per serving. You can also reheat all the leftovers on the stove top over a low flame. Add about 1-2 tablespoons of water depending on how much you have left to rehydrate the meat.

Equipment
- Large skillet 15-17 inches
Ingredients
- 2 tbsp light extra virgin olive oil or avocado oil
- 1 1/2 - 2 lbs ground pork
- 1/2 diced yellow onions
- 2 tbsp fresh minced garlic
- 2 tbsp fresh grated ginger
- 1/3 cup diced red pepper
- 1/2 cup shredded carrots
- 1/2 cup hoisin sauce
- 1 tbsp sesame oil
- 1 tbsp rice wine vinegar
- 2 tbsp soy sauce
- 1 tbsp Sriracha sauce
- 3 green onions, tops separated from the bottoms
- For serving: Green onion tops, chopped cilantro, sesame seeds and additional salt and pepper to taste.
- Optional: 1/2 cup diced mushrooms Shitiake or baby bellas will work
- Optional: 1/3 cup chopped water chestnuts
Instructions
- In a large sauté pan over medium heat, heat olive oil and then add garlic, and yellow onion. Cook continuously stirring until they’re translucent. About 4 minutes. Then add in the ginger and red pepper and cook for an additional 2 minutes.
- Now add in the ground pork and cook until it browns.
- While the pork cooks, in a separate bowl combine the hoisin sauce, sesame oil, rice wine vinegar, Sriracha, soy sauce and the white bottoms from the green onions. Whisk it all to combine. Also use this time to wash and pat dry the lettuce leaves.
- Once the pork has cooked through, spoon out any excess grease and add the carrots, and if you are using them the waterchestnuts. Then add the sauce mixture and simmer on low heat for another 5 minutes.
- Serve immediately with the lettuce leaves, tops from the green onions and cilantro. Sprinkle with additional sesame seeds and salt and pepper as desired.
