West Michigan apples
I’ve mentioned before that we live off a street named for it’s abundance of fruit. There are fruit farmers up and down the roads around our home and the main fruit they farm is apples. West Michigan apples are so good because of our position relative to the lake. The weather that we get here – in the summer and in the winter – and soil conditions are ideal for growing all varieties of apples.
Making this easy recipe for Apple Cobbler feels like I’m paying homage in a way to our neighbors and the farming community here. There’s just so many delicious ways to use them from casseroles to muffins to pancakes.
What is apple cobbler?
Apple Cobbler is a cross between apple pie and apple crisp. Everyone knows what apple pie is like, right? Gooey, delicious sweet perfection? Well, apple crisp is an easier version of a pie with no bottom and a crispy topping that’s often made with oatmeal. Apple Cobble is what you would get if these two desserts had a baby. The bottom layer is the same kind of beautiful, thick, sweet apple mix you would find in pie with a topping that is more cake like or even biscuit-like. They’re all delicious and kind of magical, but I have to say, Apple Cobbler is my favorite. I love it because it still has that full pie flavor, it’s easier to make and there’s just something about the biscuit-like topping that cannot be beat.

The best apples to use
When it comes to apples for my easy recipe for Apple Cobbler, I will often use Pink Lady apples, Honey Crisp or Granny Smith. I sometimes have used a combination of them too. The Honey Crisp and the Pink Lady apples add a nice sweetness to the dish that’s really complimentary to everything else while the Granny Smith adds a bit of delicious tartness that keeps everything from being overly sweet. They also tend to hold their shape really well. Mixing them can be the best of all worlds.
Tips for making my easy recipe for Apple Cobbler
- Use a potato peel to peel the apples. I find it makes it so much easier and it takes off as little of the apple as possible.
- Cut the apples about 1/2 to 1 inch thick. In the photos you can see i sliced them pretty thin and to be transparent, I wish they were a little thicker.
- Give it at least 10 minutes to cool after you take it out of the oven so you don’t burn your mouth. You can keep the Apple Cobbler at room temperature for 1 day. Cover it tightly with a lid in order to do so.
- You can refrigerate it for about 5 days and reheat servings of it in the microwave.
- You can also freeze it and keep it for about 2 months. Allow it to thaw completely before reheating.
- Serve this with vanilla ice cream, You won’t regret it!

Ingredients
- 8 apples slices
- 1 1/2 cups flour
- 1 1/4 cups sugar, separate the cup from the 1/2 cup
- 1/2 cup brown sugar, divided
- 1 cup milk
- 2 eggs
- 2 tsp. baking powder
- 1/2 Tbsp. vanilla extract
- 1 Tbsp. cinnamon, divided
- 1/4 tsp. nutmeg
- 8 Tbsp. butter
- 1/2 Tbsp. lemon juice
Instructions
- Preheat the oven to 350 degrees.
- Wash and peel the apples. Then slice them. I cut them thin but feel free to leave them a little chunkier or cut them into cubes. Just make sure they aren't more than 1 inch thick.
- Add the lemon juice, 1/4 cup brown sugar, 1/4 cup of sugar and 1/2 Tbsp. cinnamon to the apples and then mix. You can do this in the same pan you're going to cook them in if you like. Refrigerate once mixed for 30 minutes.
- In a separate bowl, mix together the flour, the rest of the sugar, the rest of the brown sugar, baking powder, 1/2 Tbsp. cinnamon and nutmeg. Whisk well with a metal whisk to ensure the baking powder mixes.
- Then mix in the egg and milk. The mix will seem a little dry but keep mixing until its well combined.
- When the apples are done in the fridge, room them and add to the baking dish (if you didn't mix them in the baking dish). Then drop the flour mixture onto the apples throughout the baking dish.
- Slice the butter and layer it on top of the dough mix.
- Lastly, bake for 30-40 minutes. Let cool for about 10 minutes and then serve with a scoop of ice cream.
