I adore simple treats like these Chocolate Covered Peanut Clusters. I’m a big fan of peanuts and chocolate covered peanuts in general so put them in one, little clustered bite and it makes a mouthwatering flavor combination that is difficult to resist. These are wonderful for the holidays but also work for Valentine’s Day, Easter and anytime you have a craving for a little chocolate treat.
The correct kind of chocolate to use
I recommend using baking bar, semi-sweet chocolate for the chocolate covered peanuts. You can also use dark chocolate baking bars if you prefer. You can also use milk chocolate or even mix the different chocolate bar flavors together too.
I do not recommend using chocolate chips and that is because they have stabilizers in them that keep them from melting. This is why you see them whole in chocolate chips still. I also do not recommend using chocolate melts. Those are fine for coating a cake pop but they do not have the correct flavor profile for the Chocolate Covered Peanut Clusters.

The peanuts to use
I like using a mix of salted and unsalted roasted peanuts for the Chocolate Covered Peanut Clusters. Getting roasted peanuts makes the flavor more pronounced and the salt is helpful for the overall flavoring for the chocolate. That said, I like the mix because it keeps the Chocolate Covered Peanut Clusters from being too salty in the final product.
Flakey sea salt topping
This is 100 percent optional when it comes to making the chocolate covered peanut clusters. I love a good salted chocolate, especially if it is dark chocolate. However, some of you might be perfectly happy with the amount of salt on the roasted salted peanuts included in the recipe.

Double boiler vs the Microwave
I recommend making the Chocolate Covered Peanut Clusters in a double boiler and the recipe at the bottom of the post will reflect that. It is just so much easier to get the chocolate to the perfect consistency and keep it there. It takes about 1-2 minutes for the chocolate to completely melt over the double boiler and then you can stir in the peanuts. I have this one {HERE} that will fit on a variety of kitchen pots you might already have.
That said, you can make these in the microwave too. You want to place the chocolate in a microwave safe bowl and then melt it in 15 second increments. Stir in between each 15 seconds. It might take about 1 minutes to see it fully melted. Then stir in the peanuts. Just be careful not to over heat it because the chocolate will be more prone to seizing in the microwave.
Storing the Chocolate Covered Peanut Clusters
You can store these lightly covered on the counter or in the refrigerator for up to three days. After three day you might start to notice that the salt in the peanuts is taking moisture from the chocolate. They should still taste fine but they don’t look as pretty once that starts happening.
Tips for making the Chocolate Covered Peanut Clusters
- Have all the ingredients ready and measured out. This recipe moves fast and you will want everything at your fingertips.
- If you are going to try these in the microwave to melt the chocolate, please make sure not to over heat it. If you do it will start to seize and even if you think you can use it, the texture of the Chocolate Covered Peanut Clusters will be off.
- Using a tablespoon t measure out the clusters gives you nice, cookie sized clusters. However, if you want to make them smaller you can use a teaspoon.

Chocolate Covered Peanut Clusters
Equipment
- Double Boiler
Ingredients
- 12 oz semi-sweet chocolate baking bars I like to use the semi sweet Ghirardelli bars.
- 1 cup unsalted roasted peanuts
- 1 cup salted dry roasted peanuts
- Optional: Flakey sea salt for topping
Instructions
- Prepare a baking sheet lined with parchment paper.
- Over low to medium heat, break the chocolate bars and begin to melt them in a double boiler. Once the chocolate begins melting turn the heat to low and mix in the peanuts as the chocolate melts. Mix together for about one minutes and remove from the heat.
- Using a tablespoon, spoon the chocolate covered peanuts onto the parchment lined baking sheet. If you are using flakey sea salt, you can sprinkle it on when you are done spooning all the peanut clusters out.
- Let the peanuts cool completely on the counter for about 30 minutes to 1 hour. You can also put them in the refrigerator lightly covered if you prefer them cold. Serve with dessert or as a little treat with coffee, tea or just because!
