Around the middle of July, my mind seems to enter baking season. I don’t fully consider it to be baking season until September, but something about all the fresh fruit available come mid-summer and the long, sunny afternoons followed by cooler evenings signals to my brain that I need sweet, homemade and fresh baked goods. With my birthday and the kids’ birthdays also being in the summer, we tend to do more entertaining during these months than any other season of life. And since West Michigan is known for its blueberry farms thanks to the sandy soil from lake Michigan, Blueberry Cake Cobbler happens to be one of those desserts we enjoy as long as the blueberries last.

What is Blueberry Cake Cobbler?
I have several different kinds of cobbler recipes on this website and they all include slight variations in their toppings. My Blueberry Cake Cobbler is basically blueberry cobbler made with cake mix. It is a homemade cake mix that creates a lovely, soft topping cushion for the blueberries that are cooked in butter and sugar with a little lemon zest. Some of my other cobbler recipes include crispier toppings or more cookie-like toppings. But my Blueberry Cake Cobbler is one that I love so much because all the beautiful flavors melt in your mouth.

How to make Blueberry Cake Cobbler
To make my blueberry cobbler, you need to start the blueberries first. This is a very simple recipe so you really just need two bowls to make my blueberry cobbler with cake mix and then a baking pan. The first bowl is a combination of the fresh blueberries, sugar and lemon zest. This gets set aside for a few minutes so the sugar can work a little magic on the juices of the blueberries.
The cake mix
The second bowl is for the cake mix. The cake mix consists of flour, sugar, baking powder, sour cream, milk, vanilla extract, a little salt and honey. Once everything is mixed, butter is added to the baking pan and melted. Then the blueberries are added to the butter mixture. It is all topped off with the cake mix and a little cinnamon before being baked up at 350 degrees. There are no eggs in this recipe so it is perfect for anyone who might have an egg allergy.

Tips for making my Blueberry Cobbler with cake mix
- I recommend using an 8×11 baking dish for this recipe. You want something with taller sides so the cake for the cobbler can rise a little bit. This {HERE} is what I have. A 9×13 will work too but it is going to give you a thinner cobbler and stretch the batter.
- I do recommend using fresh blueberries for the Blueberry Cake Cobbler. Can you use frozen blueberries? Sure. It is better with the fresh ones but it can be done with the frozen blueberries too. Let them thaw first and then know you may have some extra blueberry juices.
- I do recommend using whole milk and full fat sour cream in the recipe.
- To save any Blueberry Cake Cobbler leftovers, lightly cover the cobbler and place it in the refrigerator. It will keep for about four days.

Blueberry Cake Cobbler
Equipment
- 2 large mixing bowls
- 1 8x11 baking pan 9x13 will work too
Ingredients
Ingredients for the blueberries
- 4 cups fresh blueberries
- 2/3 cup granulated sugar
- Zest of 1 lemon
- 6 tbsp butter
Ingredients for the cake mix cobbler topping
- 1 1/4 cup all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/8 tsp fine sea salt
- 2/3 cup whole milk
- 1/4 cup sour cream
- 1/2 tbsp honey
- 1 tsp vanilla extract or vanilla paste
- 1 tbsp ground cinnamon
- Serve with vanilla bean ice cream and chopped, fresh basil to garnish or another sprinkle of cinnamon
Instructions
- Preheat the oven to 350 degrees.
- In a large bowl, combine the blueberries, granulated sugar and lemon zest. Mix well and then set it aside.
- In another large bowl, combine the 1 1/4 cup of flour, 1 cup of sugar, 2 tsp baking powder and 1/8 tsp salt. Sift or whisk together.
- Then add in the 2/3 cup of whole milk, 1/4 cup of sour cream, 1/2 tbsp honey and 1 tsp of vanilla. Mix together well until the batter is combined and smooth.
- In an 8x11 baking dish, add the butter and then place it in the oven for a few minutes until the butter melts. When the butter is melted, carefully remove the baking dish with an oven mitt and add the blueberry mix to the melted butter. Mix it together.
- Spoon the cake mix batter on top of the blueberries. Make sure to use all of the batter. Then sprinkle the cinnamon.
- Bake the Blueberry Cake Cobbler for 35-45 minutes or until the top is golden brown. Mine took about 42 minutes.
- Serve warm out of the oven with a scoop of vanilla bean ice cream and chopped, fresh basil as a garnish or another sprinkle of cinnamon.
